So in honor of Scarlet’s 10th birthday (tomorrow), I’m sharing a favorite recipe for Gryffindor Cupcakes! Yay! Personally, I’m a Ravenclaw and both of my kids identify as Hufflepuffs, but there’s no doubt that Gryffindor is a crowd favorite. Also, we all have bits and pieces of all or many of the houses within our personalities, don’t you think? I can certainly be all of the four, although I’m pretty much only 1% Hufflepuff. That’s not a good thing, though! Hufflepuffs rock. And I’m proud to have Hufflepuff children, who also have some pretty great Gryffindor traits too!
What You Need:
One dozen chocolate cupcakes
1 stick butter, softened
2 cups confectioners’ sugar
2-3 tbsp milk
7 oz. white fondant
0.5 tsp golden yellow gel food coloring
1 tsp burgundy gel food coloring
Cornstarch for rolling
Small bowl of water
Yields: One dozen decorated cupcakes
What You Do:
- First, ensure your cupcakes are completely cool before decorating
Then, using an electric mixer, beat butter, sugar and milk on medium – these ingredients make up your buttercream frosting and the frosting is ready once the mixture is smooth and forms semi-stiff peaks
Using an offset spatula, frost each cupcake
Take 4 oz. of your white fondant and color with burgundy gel food coloring, and knead until completely tinted
Color the remainder of your white fondant with the yellow food gel food coloring, and knead until completely tinted
Sprinkle a smooth working surface with cornstarch and add cornstarch to a rolling pin as well
Roll both fondant colors separately until they are about a quarter of an inch thick.
Cut the burgundy fondant into strips, about 4 inches long and half an inch in width
Cut the yellow fondant into small rectangular pieces – you will need about 36 of them
Dab some water on the back of each yellow piece and place on the burgundy strip, spaced apart – you can fit about 4 on each scarf
Lastly, cut some tassels on the end of each fondant scarf and place one on top of each cupcake. Enjoy!
