For as long as I can remember, up here in the Northeast, we go back after Labor Day. I know some of my friends are already sending their kids back to school within the next week or two. This will be our first year going back before Labor Day at the end of August. Even though Des doesn’t start kindergarten until September, Scarlet doesn’t know that yet! The thing is, we have one more month of summer. To me, that’s a lot of possibility. It’s road trips still to happen. It’s a lot of summer meals.
I tend to make an “End of Summer” bucket list, because I’m not someone who enjoys summer ending. Fall is absolutely delightful around here, but I’m a summer girl! You know I love sundresses, sunglasses, ice cream, and grilling recipes.
That’s why I bring out my A-game in August. Last year, that’s when I visited Alaska – my biggest life dream. This August, Cassidy and I will be attending a convention in Boston and I paid extra to meet my favorite actor of all time. There are still three months left of my favorite ice cream stand being open, and the late summer produce is off the hook around here. In fact, we use our own lettuce in my taco recipe. We don’t grow our own corn, but we use local corn tortillas to grill into hard taco shells. And for my personal favorite taco topping, we head to Walmart for Heluva Good!® Block Cheese.
We have always loved it! This is my favorite go-to BBQ recipe, and this is my favorite cheese as well. I love cheese and crackers, because who doesn’t, but I also love to get creative with my cheese. Heluva Good is great for that – it provides the ultimate snacking experience no matter the occasion. And it makes for a GREAT dinner or party recipe.
It’s mouthwatering, gluten free, made with milk, and with 0 grams trans fat per serving. I love that it’s a good source of protein and also an excellent source of calcium. It comes in an assortment of flavors I can get easily in the dairy aisle.
Now, we can talk tacos. We love to make our own hard taco shells. They taste so fresh and delicious off the grill! First, we get corn tortillas from a local restaurant. You can’t get fresher than that! Then we brush them with olive oil and grill them. The best part is when we add the Heluva Good next. This tastes so good, that it’s honestly enough for me as is! As much as I do love to add taco toppings, I think using the right cheese and the right taco shells is key for a GREAT meal.
Ingredients
- 1 lb ground chicken
- 1 packet taco seasoning
- 1/4 block Heluva Good! Cheese - Colby Jack, shredded
- 1/2 can pinto beans
- 1 avocado
- Romaine lettuce, shredded
- BBQ sauce - enough to coat your chicken
- Sour cream to taste
Instructions
- 1. Cook your chicken in taco seasoning
- 2. Brush the corn tortillas with olive oil and grill at 400 for 2-3 minutes each side until crispy
- 3. Add Heluva Good! Cheese until melted
- 4. Coat cooked and seasoned chicken in BBQ sauce
- 5. Pile tacos with desired toppings
- 6. Enjoy!

It’s an easy recipe, and it’s about the quality of the ingredients you choose. It’s the taste of the homemade taco shells, the local ground chicken, and the AMAZING cheese. It’s my perfect meal, and we have it often in our house – year-round.

I am with Janine, I’m not ready for summer to end but unfortunately it has too. However, I’m so ready for fall and cool weather. I’m a big fan of taco’s and tomorrow is actually Taco Tuesday in our house. I’ve never seen Heluva Good Cheese at my supermarket but will look for it. Also won’t be grilling this but will have it the regular way, I’m sure it’ll still taste Heluva Good!
Mmm. Avocado! Love avocado. I’ll have to make this for dinner soon. With lots of avocado. I’m the only one in my family who appreciates avocado though. More for me 😉
I’m not ready for summer to be over but I know it’s coming. I do not eat enough tacos, I need to change that before fall comes 🙂 Loving the addition of avocado.
