This Greek Yogurt and Fruit Pizza is a healthier and more delicious alternative to other cookie snacks. It’s made with Greek yogurt and is topped with a rainbow of all of your favorite fruits.
So last time we talked Delta® Greek Yogurt, it was all about a Yogurt Rainbow Parfait! I’m partial to rainbows, as you can tell, as well as great snacks, breakfasts, desserts and more, not just for the kids. It’s for me too! This Greek Yogurt and Fruit Pizza Recipe is awesome! You can call it a snack or a dessert or whatever you want, but I like to think of it as a pie. It’s not – it’s just because our local pie bar just got a little takeout window that reminds me of those pie cooling windows of yesteryear. I like to think we have one too. It’s great for food cooling/photography.
Greek Yogurt and Fruit Pizza Recipe:
We’re into the season of making positive changes. Ok, we always are, aren’t we? I like to get a big head start on New Year’s and it’s also because I just had a baby, and the kids are still getting used to the new school year, so meal and snack times are all up in the air. I’m slowly moving into a regular exercise routine, that includes all three kids, and also getting more organized with life, after all the chaos. For me, having a fridge filled with Delta genuine Greek yogurt is important. It’s an everyday staple for us, for recipes and snacks, like this awesome one that I make now:
What You Need:
1 stick butter, room temperature
1 egg, large
1/4 tsp baking powder
1 cup sugar
1 tsp vanilla extract
1.5 cups flour, leveled
1 tsp cornstarch
1/2 tsp salt
1/2 cup Delta® Greek Yogurt, Vanilla
Fruit! (we used mango, blackberries, raspberries, and blueberries)
What You Do:
1 – First, preheat oven to 350 F.
2 – Then, cream together butter and sugar until it’s light and fluffy. (about 5 minutes)
3 – And then mix in egg and vanilla, and scrape down sides of the bowl, and mix more.
4 – Then incorporate flour, cornstarch, salt, and baking powder.
5 – When you have a dough, place it onto a baking sheet covered with parchment paper.
6 – Cover your hands in flour and make for the dough into a circle, about a half inch thick.
Put dough in fridge until firm. (20-30 minutes)
7 – And then bake your dough for 17-18 minutes, until edges are golden.
8 – Let cool completely.
9 – Then slather on your Delta® Greek Yogurt, use as desired.
10 – Cover it with your fruit of choice and enjoy!
