I mean.. they’re chocolate cupcakes made with marshmallow fluff! LOVE.

This is an AWESOME chocolate cupcakes recipe, by the way, so I recommend using it year-round and not just for Halloween. Cassidy was the one to teach me that a little hot coffee goes well in a chocolate cake batter. Plus, there’s sour cream, high quality cocoa powder, and marshmallow freaking fluff. That gets me pretty darn excited. And we’ve reached this amazing phase of life in which Scarlet has the interest and skills enough to help me bake. Or rather, bake for me. Yes.

No matter who makes these, they’re a big hit!

Chocolate Marshmallow Ghost Cupcakes:

What You Need:

For the cupcakes:
1 cup all-purpose flour
½ cup high quality cocoa powder
½ tsp baking soda
Pinch salt
½ tsp baking powder
6 tbsp butter, softened
1 cup granulated sugar
½ cup marshmallow fluff
2 large eggs
1/3 cup sour cream
1/3 cup hot coffee

To decorate:
2 stick butter, softened
¼ cup marshmallow fluff
4 cups confectioners’ sugar
2-3 tbsp milk
2-3 oz. black fondant

Yields: 12 to 16 cupcakes

What You Do:

1 – First, line a muffin tray with cupcake liners and preheat oven to 350 degrees F

2 – Sift together dry ingredients in a small bowl: a/p flour, cocoa powder, baking powder, baking soda and salt

3 – Then in a large bowl, whisk together butter, sugar and eggs

4 – Add sour cream into wet ingredients and whisk some more

5 – Slowly add dry ingredients into bowl of wet ingredients, one third at a time

6 – Once all of the ingredients are well-combined, pour hot coffee into the batter and stir

7 – Fill each lined section of the muffin tray with cupcake batter, filling it up about 2/3 of the way

8 – Bake for 15-17 minutes or until a toothpick comes out clean when inserting into the center of one cupcake

Allow to cool:

9 – Once cupcakes are cool, use a knife to carve out a hole in the center of each cupcake, about ¾ of an inch in diameter and ½ an inch deep

10 – Fill each cupcake hole with marshmallow fluff

To decorate:

11 – Begin by preparing the marshmallow buttercream: using an electric mixer, beat together butter, confectioners’ sugar, marshmallow fluff and milk on low

12 – Gradually increase the speed of the mixer to high

13 – Continue beating until ingredients are well-combined, smooth and form semi-stiff peaks

14 – Scoop the buttercream into a piping bag with Wilton icing tip #12 attached

15 – Frost each cupcake generously.

To make the face of one ghost:

16 – Roll out 2 small spheres from the black fondant – about ¼ of an inch in diameter

17 – Flatten them out and place them on the buttercream ghost, side-by-side – these will act as the buttercream ghost’s eyes

18 – Roll out another black fondant sphere, slightly larger than the eyes and flatten it out into an oval

19 – Place the fondant oval just underneath the set of eyes – this will act as the buttercream ghost’s mouth

Serve and enjoy! Boo!

  1. Oh my goodness, so cute and simple. I seriously love all these Halloween treats. And so smart to bake and enjoy these now, before all the candy shows up on Halloween, right?

    1. Yes! I don’t like Halloween candy much. Especially right after it’s all mixed together as chocolates and non-chocolates. Ick! I had to sort ASAP as a kid.
      The kids love the candy, though, and Cassidy too.
