Funfetti Sheet Pan Pancakes Recipe:
What You Need:
For the Sheet Pan Pancake:
Cooking oil spray
2 cups all-purpose flour
¼ cup granulated sugar
5 tsp baking powder
2 cups whole milk
2 eggs
1 Tbsp vanilla extract
½ cup sprinkles
For the Decorations:
3 Tbsp butter, softened
1 cup confectioners’ sugar
2 tsp milk
Rainbow candy strips
Yields: 6-8 servings
What You Do:
For the sheet pan pancakes:
1 – Preheat oven to 400 degrees and spray a baking pan (8×13) with cooking oil; then set aside.
2 – In a large bowl, sift together flour, sugar, and baking powder.
3 – Once all dry ingredients are sifted, add the wet ingredients: milk, eggs, and vanilla. Mix thoroughly.
4 – Once your batter is nice and smooth, add sprinkles and gently fold into the batter. It’s important not to overmix because you don’t want your sprinkles’ color to bleed into the batter.
5 – Carefully pour into the prepared pan and bake for 10-13 minutes (or until a toothpick comes out clean when inserted into the center). Allow to cool completely.
To decorate:
6 – In a large bowl, add butter, confectioners’ sugar, and milk. Use a handheld electric mixer to beat on medium high until a buttercream forms. Once it forms semi-stiff peaks, it’s ready.
7 – Scoop the buttercream into a piping bag. Cut the sheet pan pancakes into squares and serve on individual plates.
8 – Pipe out two clouds on top of each pancake.
9 – Cut the rainbow candy strips so that they’re about 3 inches long. Arch one onto the top of each pancake, using the buttercream clouds as its base.
10 – Enjoy!
