I asked for a special savory breakfast, ice cream at my favorite place, and some sort of rainbow sprinkles concoction surprise. What I got was a special savory breakfast, ice cream at my favorite place – but on Saturday when it was sunny and perfect and not on Sunday when it literally snowed in mid-May (I have video proof), cards, gift cards, and handmade wonders, and my rainbow sprinkles concoction surprise. Yup. They made me a brown butter maple buttercream cake and positively PAINTED it with rainbow sprinkles. I’m of the opinion that there’s a rainbow sprinkles hierarchy – in that some taste like magic and some taste like wax. Quality matters. So they asked me to point them in the right direction, and they came home with a GIANT bag of rainbow sprinkles from Whole Foods. I mean giant. Enough for some fantastic leftover ideas.
I am so full right now, but it’s worth it. No matter the occasion, these will brighten your day. You can serve them in heaping stacks with butter, whipped cream, and yet more sprinkles, and with your favorite syrup and pairing. My personal favorite is bacon, sausage, or fruit. Breakfast joy.
Funfetti Pancakes For Special Occasion Mornings:
What You Need:
2 1/2 cups of flour
2 Tablespoons of baking powder
1/2 teaspoon of salt
1/4 cup of sugar
2 eggs, beaten
2 1/4 cups of milk
1/2 cup of oil
Sprinkles – rainbow – your favorite
What You Do:
1 – First, in the bowl of a stand mixer, beat the eggs with the whisk attachment, until they’re light lemon colored, about 1 minute
2 – Then, add the milk and oil, and stir on low
3 – Add the flour, baking powder, salt and sugar, and blend on low setting until all ingredients are mixed
4 – Turn mixer to medium high, and mix for another minute
5 – So, batter may have a few lumps, but that’s okay – remove bowl from mixer, and with a spoon or spatula, gently stir in desired amount of sprinkles, and set aside
6 – Turn on griddle, or place a non-stick skillet on the stove on medium heat
7 – When your griddle or skillet is hot, put about a teaspoon of butter on griddle or in skillet, and when butter melts, use a half cup measuring cup, and scoop the batter into the skillet or griddle, using about half the cup, and pouring two pancakes
8 – Then, repeat until you have 4 to 5 pancakes on the griddle or skillet
9 – When small bubbles start to form on the tops of the pancakes, flip them over and cook until done in the center
10 – Lastly, remove to a plate, butter and top with syrup, whipped cream, sprinkles and serve with your favorite pairings, or just pancakes.
