I’m back with yet another fruit pizza recipe. And really, this is so my speed today. Easy and delicious. I’ve been struggling this week and I have a heady Friday post coming later this week, assuming I can actually feel enough feels to write it. Plus, there’s a whole lot of baby and toddler whining this morning. So I’m being nice to myself today. A Toasted White Chocolate Mocha! Then, a trip to Aldi. Aldi is new to me. To be fair, Cassidy reminded me that we went to Aldi together about a decade ago, but apparently it didn’t impress us. This time? It impressed me. So much fruit to buy for my recipe! Really, everything!
Fruit Pizza Recipe: Christmas Tree Cookie
What You Need:
1 (17.5 ounce) package refrigerated sugar cookie dough
Strawberries
1 (8 ounce) package cream cheese, room temperature
Blueberries
1 cup powdered sugar
Kiwi
1 teaspoon vanilla
Oranges
More fruit for decorating (optional)
What You Do:
1 – First, preheat oven to 350 degrees.
2 – Then, line a baking sheet with parchment paper.
3 – On the parchment, press the cookie dough into desired shape. Use flour, powdered sugar, or parchment paper to keep your hands from sticking.
4 – Bake the cookie for 15 to 20 minutes or until the edges are golden brown and the middle is not jiggly.
5 – Remove from oven and allow to cool completely before decorating.
6 – In a medium bowl, beat together the cream cheese, powdered sugar, and vanilla, and then mix until smooth.
7 – Then, prepare the fruit for decorating the cookie – make sure fruit is washed, dried, and sliced (if needed).
8 – Evenly spread cream cheese mixture over the cookie.
9 – And then decorate as desired with fruit.
10 – Refrigerate until ready to serve, and it’s best if served immediately.

I have made a fruit pizza in the past, but it was for summer and not Christmas Tree Cookie shaped by any means. So, this one totally blows my mind! Seriously how clever and ingenious. Definitely want to try to make soon, too 🙂
