Now if you’ll remember, I once made Pink Cake Truffles, so anything frosted and colorful and sprinkley and truffley is fine by me. These are the cutest! I often make them for kid parties, but I always make sure to set some aside for myself because they are totally my speed. Right now with warmer weather and upcoming kid birthdays, we’ll have so many reasons to make these. We’re looking forward to outdoor play dates, small parties with my nieces and nephews, and I’m even looking forward to packing them in Des’ lunchbox for special occasions. He has outdoors lunch right now, and it’s been an adjustment for sure. I love thinking of him opening up his little lunch to find one of these! And maybe one or two for Scarlet while I’m at it. And Cassidy too?
Frosted Animal Crackers Truffles Recipe:
What You Need:
13 oz bag Frosted Animal Crackers
4 oz Cream Cheese, softened
6 oz vanilla almond bark
What You Do:
1 – Puree animal cookies until they are fine crumbs.
2 – And then combine crumbs and cream cheese (you can use your hands).
3 – Form mixture into 1-inch balls and place them on a cookie sheet, and then refrigerate for 1 hour.
4 – Then, melt almond bark.
5 – Roll each ball in bark until it is covered.
6 – Top with sprinkles before bark hardens.
7 – Refrigerate for 30 minutes before serving.
On a side note, I really don’t know WHAT a truffle is, and not the fruiting body of a subterranean ascomycete fungus kind. Apparently, all I can really find is that they are fancy bite-sized chocolate concoctions. I think it comes from Latin for “lump,” and chocolate truffles are named after truffles because of their striking resemblance with the original truffle mushrooms. The more you know!
