And the answer is yes. Yes, you can. Don’t be scared by fondant. I used to be scared by it as well but I’m an ace at molding things. I was always a clay and play dough queen, so why not make it taste good too? And I realize they make edible play dough, but I will say that Fondant Apple Back to School Cupcakes are more fun. I think I’m a good authority on that one.
School continues to run as smoothly as it can here – as smoothly as back to school can run in a family of one nutty mama, two kids, three pets, and a sometimes Phish-wayward husband. We’re doing it, though. More on that in tonight’s post!
Fondant Apple Back to School Cupcakes:
What You Need:
Chocolate cake mix + required ingredients
6 oz. red fondant
2 small pretzel stick rods
Green decorating icing
2 sticks butter, softened
4 cups confectioners’ sugar
3-4 tbsp milk
Yields: 12 decorated cupcakes
What You Do:
1 – Bake your chocolate cake mix as cupcakes – we used red liners to bake them in
2 – Allow the cupcakes to cool, line a baking sheet with wax paper, and roll your fondant into 12 spheres – about 1-inch in size each
3 – Break pretzel sticks into small pieces and insert one on the top of each fondant sphere
4 – Decorate each fondant apple with green decorating icing (this will act as your apple’s leaf)
5 – In a stand mixer, start beating butter, confectioners’ sugar and milk on slow speed – gradually increase to high and once the ingredients are thoroughly combined and smooth, scoop into an icing bag
6 – Frost each cupcake and top each cupcake with an apple fondant. Enjoy!
