I don’t know how it is where you live, but it’s a whole school week off here – sandwiched between two weekends. That’s nine days! As a kid in New Jersey, I remember only having a long weekend for February break. Although it’s possible we always had a week set off for it, but used more than our allotted snow days. That would not surprise me at all! Here, we have already used so many snow days – and have had two feet of snow fall in the last two weeks. It’s a winter wonderland in Northampton!
And it’s supposed to be 63 degrees by the end of the week. What?? April vacation is usually full of road trips and adventures, and inching our way into warm weather activities – or at least the ones that open in New England before Memorial Day. I have less time now for work, but more time for books, fireside snuggles, breaking up endless sibling bickering, and trying my hand at new kid-friendly recipes. We decided to work some magic with Eggo Buttermilk Waffles, as well as a new one to us.
Kellogg’s® Eggo® Chocolatey Chip Waffles.
You see, we just got some delicious news. Eggo Waffles now have colors and flavors from natural sources. The no artificial flavors, and the colors from natural sources pertains to the full Eggo® product line at Walmart. So off we went!

We’ve been Eggo Waffles fans since Scarlet could speak! I wanted to make a recipe they could enjoy for breakfast (in Des’ case), for lunch (in Scarlet’s case), and for snacks, dinner, dessert, etc. The delicious new news about the colors and flavors from natural sources is too good to resist for a family that can never run out of Eggo Waffles. They are just like the ones we make at home – still made on waffle irons – but larger ones! My kids ran to pick out old and new favorite flavors.
When we got home, we got out the ingredients to make Eggo Waffle Pizzas. I think the sky is the limit with the toppings but I tend to buy a few different kinds of fruits, pumpkin seeds, jam or jelly, peanut butter, and yogurt.
I think making them peanut butter AND jelly is an awesome breakfast, lunch, or dinner option. My kids didn’t want peanut butter, so I made the yogurt the star of the show as the “cheese” of the “pizza.” Assembling is almost as much fun as eating.
Recipe:
Ingredients
- Kellogg's® Eggo® Buttermilk
- Kellogg's® Eggo® Chocolatey Chip Waffles
- Strawberry jam or jelly
- Plain or vanilla yogurt
- Strawberries, blueberries, raspberries
- Seeds or nuts (optional)
- Honey or maple syrup
- Peanut Butter (optional)
Instructions
- Toast waffles according to directions
- Drizzle honey or maple syrup over waffle
- Spread strawberry jam or jelly and maybe peanut butter too
- Spread yogurt
- Top with "pizza toppings" of choice
Delicious! I added some freshly squeezed orange juice to the mix, and almost felt like it was spring or summer with all the warm weather fruits. We enjoyed a snack together out on the deck. We were wearing jackets, but it was still nice enough for a picnic. It makes me so excited for spring and summer (and even fall) because of being more on-the-go. Although, it just makes us more creative in the winter. What I love about Eggo Waffles is that there is no end to their versatility and fun. Finding out the delicious new news was just icing on the cake – or toppings on the waffle pizzas. I love making these.

franco loves eggo waffles! i did too as a kid. my favorite pic is the one of the kids eating.
My favorite thing is when the butter melts on it and you add fresh syrup, and then take that first bite.

These look amazing!!! I love the idea of the yogurt! We’ve made something similar with cream cheese but I think I’d like yogurt even more! We’ve got some Eggos in the fridge I think we can have these for breakfast!

Not tried waffles with yogurt, fruits and seeds on top. I typically have them with just jam. Your waffles are much more interesting!
Even doing jam makes it special! Jam and butter is what my kids like sometimes.
Growing up we never had mid-winter break, or anywhere I’ve lived since then. However, since moving here there is a mid-winter break, but it’s only a four day weekend. WOMP WOMP.

Right? I was just telling my brother about it and he lives and works in NJ, and thought it was odd. We used to have that four day weekend too, unless we went over our snow day allotment.. yuck.
