We have so many fun traditions in this household. We throw a family Seder here, and we even plan to have a video Seder with other family members who don’t live with us. We also love to make an Easter Egg Hunt in our woods and yard! And bonus points for making a nice Easter brunch as well. Easter brunch is one of my favorite things on earth. Breakfast foods. I definitely have my favorite Smithfield Foods brands and products, as you’ll see with the ones I chose for each recipe. I’m definitely a protein-fiend, so when I make a spread for Easter brunch, or a spring home picnic, I always focus on protein-rich products and dishes. Ham and Cheese Scones
What You Need:
2 cups flour
1 tablespoon baking powder
2 teaspoons white sugar
1 teaspoon thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
4 tablespoons, cold butter, cut into cubes
3/4 cup diced ham – Smithfield Anytime Favorites Boneless Ham Steak Hickory Smoked
1 cup shredded cheddar cheese
1 cup half and half
What You Do:
1 – Preheat oven to 400 and line a baking sheet or round pizza pan with parchment paper, and then set aside.
2 – Add flour, baking powder, sugar, thyme, salt and pepper in a bowl and mix well.
3 – Use a pastry blender to cut in butter until it’s small crumbs. Fold in ham and cheese.
4 – Add half and half and mix just until combined.
5 – Place dough on parchment paper, and using floured fingers and hands, shape into a circle, about 3/4″ thick. The circle will be around 8-9″ in diameter.
6 – And then, use a knife to cut into 8 triangles.
7 – Bake for 18-22 minutes or until brown.
8 – Remove from oven and let set for 5 minutes. Cut into triangles (cut the lines again) and serve warm.
Makes 8 scones
Chicago Hot Dog Salad
What You Need:
1 package, 12 oz, Nathan’s Famous Jumbo Restaurant Style Beef Franks
1 package, 8 oz, shredded lettuce
3 large pickles, cut into chunks
1 package, 8 oz, shredded cabbage
1/4 cup mustard
1 pint grape or cherry tomatoes, quartered
1 small onion, sliced
2 tablespoons olive oil
1-2 teaspoons brown sugar
2 tablespoons vinegar
salt and pepper
What You Do:
1 – Grease a skillet with nonstick cooking spray and slice hot dogs on an angle, keeping them 1″ thick.
2 – Heat over medium heat, searing hot dogs, and then let stand to cool.
3 – Add lettuce, cabbage, pickles, tomatoes and onion in a large bowl. Mix well.
4 – In a smaller bowl, add mustard, 1 teaspoon brown sugar, oil, and vinegar and mix well.
5 – Season with salt and pepper. If the mixture is not to your taste, add 1 more teaspoon brown sugar and mix well.
6 – Add hot dogs to salad mixture and drizzle with mustard dressing. Mix well. Refrigerate for 1 hour. Serve cold.
7 – Store leftovers in an airtight container in the refrigerator.
*For the cabbage, I used a package of pre-shredded “Cole Slaw Blend” and it has green and red cabbage, and carrots.
Meatball Stuffed Peppers
What You Need:
1 package, 16 oz, Carando Abruzzese Italian Style Meatballs
3 peppers, cut in half and seeds and stem removed
2 cups cooked white rice
1 cup pasta sauce
1/4 cup diced onion
1 teaspoon garlic powder
1 teaspoon salt
1/4 teaspoon pepper
1 cup shredded mozzarella cheese
dry Italian seasoning
What You do:
1 – Preheat oven to 400 and line a baking sheet with parchment paper. Place peppers, cut side up, on the parchment paper. Set aside.
2 – Add rice, pasta sauce, onion, garlic powder, salt and pepper in a bowl and mix well.
3 – Place the mixture into the bottom of each shell, top with 2 meatballs and follow with additional rice mixture to fill the holes and gaps.
4 – Bake for 35-40 minutes or until meatballs are no longer pink. Top with cheese and return to oven for 3-5 minutes or until melted.
5 – Season with Italian seasoning.
