Well, we have officially been back to school for a whole week! I can’t say it’s been completely easy. I’m still learning my morning drop-offs, and trying to figure out which kid gets dropped off first, and how much time that allows me for kid #2. I’m still trying to learn how to pack two lunches and two snacks, and figuring out the third snack for days in which Des goes for extended days. The kids are hungrier these days! How is that possible? It’s more important than ever to feed them well. “Especially in the early stages of their life – quality nutrition is most important for their good development.”
Scarlet has soccer, and Des has extended days at preschool. He also has one day of daycare. It’s difficult to juggle all that he has to do, and where I’m taking him on any given morning, but one thing we all agree on is that he can easily eat all of the meals I provide him. His teachers always marvel at his appetite, and I do too! As for Scarlet, she has a late lunch this school year, and snack is after lunch, so breakfast is more important than it’s probably ever been. We cook it together:
The kids always want to cook with me, which can be challenging on busy mornings. I didn’t fully appreciate it at first because it seemed more hectic and messy than I was used to, but since I never learned to cook until later in life, I’m ecstatic at their interest. It also means more time with them. The best part is that our Easy Kid-Friendly Breakfast Rice Bowls are QUICK, thanks largely in part to Uncle Ben’s Ready Rice. It cooks in 90 seconds and is a big part of our easy breakfast recipe.

This is a big part of our Breakfast Rice Bowls. They are perfect for school mornings because they have poached or fried eggs on top of Uncle Ben’s Ready Rice, as well as a slew of delicious toppings, and whatever we feel like making together.
Cooking with your family is FUN, good for you, and a great learning opportunity for your kids. Even in this busy season, Uncle Ben’s Ready Rice is perfect because it’s simple and delicious. This is a quick breakfast, and full of lots of good stuff:

Easy Kid-Friendly Breakfast Rice Bowls
Ingredients
- 2 cups cooked Uncle Ben's Ready Rice - Whole Grain Brown
- 1 tsp red wine vinegar
- 2 tbsp olive oil or butter
- Kosher salt & pepper to taste
- 2 large eggs
- 1 avocado, chopped
- Salsa, to taste
- Black beans
Instructions
- Cook rice and set aside
- Cook beans and set aside
- Mix rice and beans with vinegar in a small bowl and season with kosher salt and pepper
- Heat oil over medium-high heat and cook eggs to desired doneness
- Split rice and beans into two bowls, top with fried eggs, avocado and salsa
- Enjoy!

Pretty awesome, right? I will do whatever it takes to have easy breakfasts – prepared together, and eaten together. Not only that, it’s delicious and customizable. You know, I’m not sure I had either? Cassidy is the type to scramble last night’s dinners into breakfast. Sometimes it’s brilliant and sometimes it’s too non-breakfasty for me!
I wish I could eat eggs. I would certainly try this. But it wouldn’t be as fun without the egg.
Argh – probably but maybe you could substitute cheese? Just a giant block of cheese. Never too much. Eight grams of protein!
You could substitute the eggs with 100% egg whites found in the dairy isle. Very tasty and easier on your stomach. I had to give up egg yolks.
Oh – those look delicious! May have to add some rice into my breakfasts.
It really helps fill up the kids. They’re like bottomless pits!

Mm… yes. I needed a dash of medium salsa. So good!!! The vinegar adds a lot of flavor but also might turn kids off.
This is such a great idea, and looks so yummy! I’ve never tried the instant rice but it sure does make a lot of sense. I’m allergic to avocado – tragic, right!? My boyfriend would love this little bowl! 🙂

It says nothing bad!! I just mean it’s kid-friendly which ALSO means adult-friendly. That’s how I feel about rainbow sprinkles too, though…

I used an Alton Brown method of steaming them! You fry them with a cover. I may have left them too long, because my kids don’t like it as runny as I do, but there you go. Pro tip!
It’s adorable that you cook together. I wake up pretty late in the day because I usually finish work at 3am so my mother in law cooks for Reiko most of the time. With that, I always have to find other activities Reiko and I can enjoy together. That breakfast bowl is super yummy! And I love that there’s avocado.
Oh boy – you need to sleep in! Mothers and mothers-in-law are priceless. So awesome for Reiko!!

I think I thought of it one night after nachos. We had leftover rice and beans! And then I realized I could make fresh rice in 90 seconds so I went and bought that rather than leftover rice. Tada!

I ate rice for breakfast quite often as a kid. My mom was a fan of serving us a hot breakfast. We rarely at cereal, but we ate lots of oatmeal, rice, and grits.
mm.. with my mom too. And Cream of Wheat. All that stuff!
I hate to say that my kids would balk at the avocado and beans…but it’s true. That said, the Husband and I would eat this up in a heartbeat!

This reminds me of the breakfasts they served Sam and I when we volunteered at the nature preserve in Peru. I couldn’t get myself to eat rice first things in the morning, but I would totally eat this for lunch or snack. Yum!
I would swirl a little marmalade into the rice,then top it with sliced almonds,a little coconut and some crushed pineapple. In fact,I’m gonna do this on the morning!
Would never have thought to do rice for breakfast, but I love the Uncle Ben’s Ready Rice. Cooks so quick and easy with no mess. Maybe we’ll be doing rice bowls for breakfast next week. 😉
