Easy Brownies for Halloween

And they are easy! These are the BEST brownies. You know I don’t like plain brownies. I like brownies with STUFF, almost like the Ben & Jerry’s of the brownies world. These are gooey and moist, and frosting-y, and they have that little OREO crunch as well. Plus, layers. I can and have written entire articles about how much I love layered food. It’s like my love for charcuterie. None of this stuff is new for me. I’m not trendy. I have always, always loved layered foods (think those Twookies wafer bars in the school lunch line – Google it) and I have always, always feasted on charcuterie like it’s in style. I think that’s how I survived college, to be honest. Apples are side dishes, and charcuterie is dinner. There. Anyway, brownies. These are fun and funky! I don’t really know exactly what to make of them. They’re a bit of a hot mess, but a delicious one at that.

Easy Brownies for Halloween:

What You Need:

1 box of brownie mix
2 eggs
1 package of OREOs with orange filling
1/3 cup of oil
1/3 cup of milk
1 can of milk chocolate frosting
1 can of white or vanilla frosting
Orange food coloring gel

What You Do:

1 – In the mixing bowl of a stand mixer, place the brownie mix, eggs, oil, and milk, and blend on medium with the whisk attachment until all the ingredients are mixed smooth.

2 – Place parchment paper in the bottom of a 9X9 inch pan, and pour the brownie mix in the pan.

3 – Then, place OREO cookies on top of the brownie batter, until the top is covered in cookies.

4 – Place the pan in the oven at 350 degrees for 25 – 30 minutes; and then remove the pan, and allow to cool completely.

5 – While the brownies are cooling, place the white, or vanilla frosting in a bowl, and remove the orange middle of about 10 OREO cookies, and add to the vanilla frosting

6 – Add 1 teaspoon of orange food coloring gel, and mix well.

7 – Add more food coloring gel if the desired orange color is not bright enough, until desired color is achieved.

8 – When brownies are cool, frost with the orange frosting, and place the brownies in the refrigerator for 30 minutes.

9 – Remove the brownies from the refrigerator and frost with the chocolate frosting, and crumble the remainder of the OREO cookies on top.

10 – Cut brownies into 3 X 2 inch squares, and serve immediately. Enjoy!

Notes:

For more cake-like brownies, add 3 eggs instead of 2 when making the brownies. Bownies will keep, covered, in the refrigerator for up to 5 days. You can also serve with ice cream or whipped cream.
