And this really exemplifies food as art, because you can go all out with these. We’re definitely a Royal Icing family, and a Buttercream Family, but we are a cream cheese frosting family as well. I think that this frosting tastes good, is fun to use, and is family friendly when baking with kids. You can’t beat that! So these cookies don’t look identical to one another if I’m doing some, and Scarlet is doing some, and Cassidy is doing some, but mine won’t look like yours either. The point is to have a great sugar cookie recipe, and a great frosting recipe, and the rest is just gravy, errr..frosting. And don’t worry, I will show as best as I can how you can achieve these fun results.
Easter Egg Fruit Pizzas: Easter Recipe:
Easter Egg Fruit Pizzas
Time: 20 minutes
Servings: 12
What You Need:
Sharp knife
1 roll of sugar cookie dough (I used Pillsbury, but any sugar cookie dough will do)
Sprinkle of flour
Rolling pin (optional)
Oval shaped cookie cutter (or mason jar lid bent in shape of an oval)
¾ cup diced kiwi (or any substitute fruit)
1 8oz. block of softened cream cheese
⅓ cup granulated sugar
¾ cup raspberries (the clear favorite around here)
1 tsp clear vanilla flavoring
¾ cup diced strawberries
¾ cup blueberries
What You Do:
1 – Using a sharp knife, slice your sugar cookie roll into 12 slices.
2 – Then, roll each slice into a ball, and then place on a lightly floured cutting board or piece of wax paper.
3 – Use a rolling pin or your hands to flatten the dough to approximately ¼” thick.
4 – And then use a cookie cutter or a mason jar lid to shape the cookie dough into an oval shape. (To make the mason jar lid oval shaped, squeeze two of the sides gently, and then press on the top and bottom to make the pointed ends more rounded. Continue pressing around edges until you get the oval shape you like.)
5 – The cookies will almost double in size once baked, so make sure to leave plenty of space between them on the cookie sheets.
6 – Bake the cookies per the package instructions, but be sure to get the cookies a little crispier than suggested on the package. You will want the edges to be a nice golden brown. Otherwise, the cookies will be too soft in the middle, and will not be able to hold the weight of the frosting and fruit toppings.
7 – While the cookies are baking, mix the softened cream cheese, granulated sugar, and vanilla in a bowl until smooth and creamy.
8 – Then, once cookies are done baking, cool completely on a cooling rack. Use a spoon to smooth approximately 2 Tbsp of frosting onto each cookie.
9 – Next, decorate each cookie with the fruit. Try different patterns on each cookie to mix it up, and then enjoy!
Tips/Helpful Hints:
You can try any fruit combinations you like. You could use bananas, mandarin oranges, grapes, etc. for other color combinations and flavors. If you don’t have a cookie cutter or mason jar lid handy, you could also flour your hands, and just shape by hand. Once flattened by the rolling pin, the shape is so close to an oval already, it would be easy to slightly shape by hand. If you are in a rush, you could substitute the homemade frosting with a store bought jar. Or use buttercream frosting – yum! These are best enjoyed immediately. If you are making them ahead, you could frost the cookies, but wait to add the fruit until right before serving.
If you don’t have clear vanilla, you can use regular vanilla flavoring/extract. Your frosting may be just slightly more cream colored than white. That’s it!
