It’s like this whole new me! I’ve been silent for so long, and for what? I have a mellow and patient family and they were just waiting to see what I had to say and do, when it was time. What do I want to say? I want to say pie for breakfast on Tuesday mornings, and bacon and eggs on Wednesdays. I want crockpot chicken, a new vacuum cleaner, a wood-burning stove, a white kitten, a hot tub, a movie theater screen in the basement, and lasagna too. I really, really like lasagna. Like Garfield.
We’re having an old friend over for dinner tonight and I wanted to make an easy and fun appetizer. Mostly, though, my eye is on the prize(s) – the main event(s). The holidays. In our house, we have a Thanksgiving #2. With five “kids”, our four grandkids and two on the way, in-laws, pregnant bellies, spouses and uncles, it’s nearly impossible to get everyone together on Thanksgiving Day itself. SO, we throw a lunch the next day with leftovers, but then by dinner, we’re sort of turkey-ed out after having it for two big meals. I have grown up on NESTLÉ® STOUFFER’S® Family Size Entreés® and since I’ve been on this major lasagna kick, and dragging Des down (up?) with me, I want to make something that everyone can eat since we’ll be together.
It’s so wonderful not to cook from scratch the night after Thanksgiving! Since we have many little ones, I want to make something bite-sized because most kids (and some adults like me) prefer bite-sized snacks and meals. These Double Decker Mini Lasagna Cups are really delicious! The first thing I did was go to Walmart to get the NESTLÉ® STOUFFER’S® Family Size Entreés Lasagna With Meat and Sauce.
Here’s what you’ll need for this recipe:
1 package of 12 ounce wonton wrappers
1 package of NESTLÉ® STOUFFER’S® Family Size Entreés – Lasagna with meat and sauce
Shredded mozzarella cheese
Fresh basil or parsley, or both
The first thing I did was cook it as directed in the oven at 375 degrees for 70 minutes, and then I pulled it maybe five minutes early. I sprayed a muffin tin pan with non-stick baking spray and set one wonton wrapper in every muffin slot. Then I scooped maybe a bite-sized square of lasagna out of the pan and into the wonton wrapper. Then I placed another wonton wrapper on top and put another square of lasagna in the cup – making it two layered! Then I sprinkled shredded mozzarella cheese, parmesan cheese and some basil on top of each cup. You can also use parsley if you like that better, or with basil.
Then I set the oven down to 350 from 375, and baked the cups until they were golden brown. It took about 6-7 minutes in my oven until the wonton wrappers looked golden, and the cheese had melted very evenly and nicely.
There will be about five of us tonight, but next week I’ll be making my Double Decker Mini Lasagna Cups for about.. 30 dozen people. That’s a slight exaggeration but it’s nice to know that I can if I want to do it! They are easy, fun and delicious.
