Do you remember when I made Brownie Fruit Pizza? Consider this a sequel, or a sister recipe to that one. Or maybe a cousin recipe? Speaking of which, we had my sister and her two kids over for the weekend. We hadn’t seen them since January! Isn’t that heart-shattering?? My nephew’s fourth birthday party was in March, right before the pandemic. We couldn’t go because I was feeling too first-trimester-like and Cassidy was aware of the growing number of COVID19 cases in both of our states. And then we were all busy or trying to keep each other safe. Let me tell you – I hadn’t hugged anyone outside of my family since March! This was so nice to have this one perfect weekend. We played and laughed and hugged and ate a lot of treats. More than usual!
Delicious Watermelon Pizza Recipe:
What You Need:
2 thick slices seedless watermelon
1 (8 ounces) cream cheese, room temperature
Kiwis, or whatever fruit you desire for decorating
1 cup powdered sugar
Blueberries, or whatever fruit you desire for decorating
1 teaspoon vanilla
1 cup milk chocolate chips
Strawberries, or whatever fruit you desire for decorating
1 teaspoon coconut oil or vegetable shortening
What You Do:
1 – First, in a medium bowl, beat together the cream cheese, powdered sugar, and vanilla; and then mix until smooth.
2 – Prepare the fruit for decorating the pizza. Then, make sure fruit is washed, dried, and sliced (if needed).
3 – Pat the watermelon slices with a paper towel to help the cream cheese mixture stick.
4 – Evenly spread cream cheese mixture over the watermelon slices; then decorate as desired with fruit.
5 – Melt milk chocolate chips with coconut oil in the microwave for 30 seconds. Then, stir well. Drizzle over fruit.
6 – Lastly, refrigerate until ready to serve. Best if served immediately.
