This recipe! Oh my goodness is it good. I’m so glad I finally nailed it.

You see, I first had it at a local coffee shop and thought about how I could make it at home and save myself the money. And a bonus for making it the night before and heating it up in the morning for the family! The thing is, we all have different morning schedules. Cassidy gets up early to go to the gym and will feed the dogs. That leaves the tiny humans to me. Mornings are often hectic and we don’t get a chance to connect as well as we could. That’s why we plan a weekend brunch for every Sunday. That’s how we unwind after a long week, but also get inspired for the next one ahead. It’s exactly what we need before the day’s adventures.

Being the Best You With Bolthouse Farms!

We have a weekend morning routine and it’s awesome. We tend to sneak out on the earlier side whenever possible to take the two dogs out for a brisk walk or hike before the sun is too high in the sky. Then we come back home for breakfast and for our favorite Bolthouse Farms® products! Man, they are good. We got ours as part of the Publix “Best You” promotion, in which you can get participating Bolthouse Farms products and savings here! We love Green Goodness®, Strawberry Banana Smoothie, and Protein PLUS® Chocolate – that one is perfect for coming in after a long hike outside. Every sip brings the magic of the farm to us wherever we are.

No matter the occasion, Bolthouse Farms is often the perfect part of the day – whether before, with, or after brunch or even better – for snacktime. I tend to work on weekends, just like I do on weekdays, so I cherish my snacktime all seven days of the week. What I love to do is get up for a hike, then have a big family brunch together, and then have a late morning snack of Bolthouse Farms Protein PLUS® Chocolate. It has chocolate that is rich in flavor, and the shake has 30 grams of protein and 21 vitamins and minerals per 15.2 oz bottle! Plus, it’s delicious!

And what does it go great with? My Delicious Egg White Bites. Surely you’ve seen these at coffee shops, but did you ever know you can make them easily at home? And it’s fun to make them custom with your own ingredients too. I like different cheeses than Cassidy does, and the kids have differing tastes too. Ultimately we try to make them fun for everyone for our weekend brunches. It’s a way to connect, eat some great wholesome food, and get inspired for the rest of the day.

Egg White Bites Recipe:

Makes 5 Egg Bites

What You Need:

6 Egg Whites
1/2 tbsp Greek Yogurt
1 tbsp Green Onion (finely diced)
1 1/2 tbsp Monterey Cheese (freshly shredded)
3 tbsp Red Bell Pepper (finely diced & sautéd)
1 tbsp Spinach (finely chopped)
1 tbsp Feta Cheese (finely crumbled) – we used Ricotta instead
1/4 tsp Hot Sauce
Salt & Pepper

ETC. TOOLS:
5 Ramekins
Baking Pan (approx. 13” x 9” x 2”)

What You Do:

1 – First, preheat oven to 300F

2 – Then, butter or grease each ramekin and place them in a baking pan

3 – Boil approximately 4 cups of water

4 – Whisk together Egg Whites and Greek Yogurt

5 – Then, add Green Onion, Red Bell Pepper (make sure to let this cool after sautéing – we don’t want to scramble our eggs before they are in the oven), Spinach, Monterey Cheese, Feta Cheese, Hot Sauce, and Salt & Pepper, and stir well

6 – Pour approximately 1/3 cup of egg mixture into each ramekin

7 – Pour boiling water into baking pan, surrounding the ramekins and reaching approximately halfway up the sides

8 – Bake for approximately 34 minutes

9 – Remove pan from oven and remove ramekins from pan the egg white bites should slide out of ramekins easily

10 – Lastly, serve immediately or freeze in airtight container

  1. Yum to all of this! Plus I can eat it. Although I did have a completely not good for me physically, but mentally very good for me doughnut yesterday. It was divine. So today it is back to my egg whites! I am going to grab some of these and try your recipe!

    1. Good for you!! I’m a keto cheerleader for Cassidy but gosh, I need a break from it. So good on you for that doughnut! All in good time.

  2. My family would love these! They would be perfect for a slow Sunday brunch.
