It’s Crockpot Everything Season, all. And if we’re being honest, and maybe you can tell with the addition of Guinness, this is also a good St. Patrick’s Day recipe for my family, but it’s really good on any cool or cold night. Or anytime you just want a meal to slow simmer while you get to smell it cooking so slowly and wonderfully all day. Yup. You can’t beat that. It’s so hearty and satisfying and definitely one of my favorite dinners. I like to get some crumbly soft bread and dip it right in there! Or dip it in soft, unsalted butter right alongside my beef stew. No matter how you like it, if you like beef stew, you’ll love this easy and delicious recipe. It’s much easier than saying Worcestershire Sauce, by the way. So it’s a good thing this is a blog post and not a cooking video because you do not want to hear me stumble over that one! This is much better:
Crockpot Beef Stew:
What You Need:
1 1/2 pounds extra lean stew beef
1 teaspoon coarse salt
2 garlic cloves – minced
1 tsp ground pepper
2 Tbsp all-purpose flour
2 Tbsp canola or olive oil
4-5 medium Yukon gold potatoes – peeled/diced
1 1/2 cups baby carrots – peeled and diced
1 large yellow onion – chopped
1/4 cup tomato paste
4 cups beef broth
11.2 oz bottle Guinness extra stout
1 Tbsp Worcestershire sauce
1 bay leaf
1/2 Tablespoon dried thyme
Salt and pepper, to taste
Parsley, to garnish
What You Do:
1 – First add the beef, salt, pepper and flour to a large mixing bowl; and then toss well to coat the beef.
2 – In a large skillet, heat the oil over medium-high heat. Reduce the heat to medium and add the flour-coated beef, and then brown on all sides. Set aside.
3 – Turn the crockpot on and spray with a non stick coating spray; then add the potatoes, carrots, onions, and bay leaf.
4 – Place the browned beef, tomato paste, Worcestershire sauce, garlic, and thyme on top of the vegetables.
5 – Pour the beef broth and Guinness into the crockpot and stir to combine.
6 – Then, cover and cook for 3-4 hours on high or 10-12 hours on low. Add salt and pepper to taste.
7 – Serve the beef stew in a bowl or on top of mashed potatoes. Garnish with parsley, if desired.

Mmmm, thanks for this. I haven’t made beef stew in a long, long time, but it’s one of my favorites. My mom used to make beef stew in the crockpot, but I don’t have her recipe, unfortunately. I will definitely give it this one a try! It looks so similar.
