And now look at that! Easter is only five days away and now my family realizes why I’ve wanted to be ready. We’ve all had to make concessions this year for sure. Our Passover Seder will now be a Zoom meeting, but you know what? We’ll be making Matzoh Ball Soup and latkes, and our loved ones are all healthy right now. Our Easter brunch won’t be out at the local hotel, but we’ll make it here. I online ordered goodies for the kids’ Easter baskets and we can make an Easter Egg Hunt right at home. So even though this is a hard year, I have to remind myself that it has its mixed blessings, and there’s some good too. Like making this Cream Cheese Dip for Easter!
Cookie Cream Cheese Dip For Easter:
What You Need:
1 stick unsalted butter, softened
25-30 candy eggs
1 cup confectioners’ sugar
1 tsp vanilla extract
8 oz. cream cheese, softened
1 tbsp whole milk
Yields: Serves 6-8 as an appetizer/dessert
What You Do:
1 – First, add cream cheese, butter and confectioners’ sugar in a large bowl.
2 – Use an electric mixer to beat together the three ingredients, starting on low speed and gradually increasing to high.
3 – Then, add vanilla extract and whole milk. Beat until all ingredients are well-combined.
4 – And then, crush the candy eggs and fold into the mixture, while leaving some aside for topping.
5 – Serve in a bowl alongside a batch of shortbread and vanilla cookies. Then, garnish with the remaining candy eggs.
6 – Lastly, feel free to top with additional ingredients, and if desired – mini marshmallows, sprinkles, etc. Then, enjoy!
And that’s it! It’s a simple recipe that will totally delight your kids. I can’t wait to serve this after our Easter brunch. Oh, who am I kidding? I can’t wait to serve this at any time of day because it’s always good! So what are you serving this year? I love to hear all about it!

That looks so good! I wish I had gotten cream cheese when I did grocery pick-up this week. I’ve been craving all kinds of sweet treats during the quarantine. I love your positive attitude, and I love that you’lll be doing your Passover Seder via Zoom! What a great idea. (Several years ago, my sister, who lives in another state, couldn’t be here for my daughter’s high school graduation. Back then, all we had was Skype, and I was too technically challenged to make it happen!)
I’ve gone back to using Skype as well. It’s new/old to me.
Last night was a special Passover in that we made the best of what we had. And I think it will make next year even better!
