Don’t get me wrong – I had a super healthy childhood. We ate egg whites and vegetables and snacks from the co-op, rather than the supermarket. My parents did a great job, but something happened in my teen years. I was growing faster than I could handle. Always a late bloomer, I went from 4’11” to 5’6″ rather quickly. And I’ve always been underweight. The amount of food I used to eat! My sister will tell you about me eating boxes of Little Debbie Nutty Bars or Cosmic Brownies, plus polishing off a bowl of microwave popcorn, and sometimes all at once. I’m more about balance these days.
I LOVE Cosmic Brownies. They’re fudgy and full or rainbows. What more could you want? I’m not into the million ingredients, though. And this is not preachy – holy cow it isn’t. I love junk food and I love healthy food, and personally I don’t believe there are good and bad foods. There’s just balance. That said, I’m a supertaster and when something has too many ingredients or chemicals, it doesn’t taste right to me. Enter this recipe. I added brownie mix to the recipe, but only because I know this will work and isn’t difficult. I generally make mine from scratch. If you know how to make super fudgy brownies from scratch, then I first recommend that. Do whatever it takes to get yourself some fudgy cosmic brownies! And FAST!
1 box of fudge brownies
2 cups of semi-sweet chocolate chips
1/2 cup of heavy whipping cream
Mini M&M’s or M&M’s
1 – Prepare brownies according to directions, or make from scratch if you know a fudgy recipe!
2 – Bake for 20 minutes and then set on counter to cool
3 – Prepare the fudge topping by heating up the heavy whipping cream in a sauce pan on medium heat. Add the chocolate chips and keep stirring until completely melted and smooth
4 – Pour on top of brownies and smooth it out using a spatula
5 – Sprinkle M&M’s on top! Set in the fridge for an hour before serving
