Classic Gingerbread Cookies Recipe

While I feel like I have sugar cookies and butter cookies, and even chocolate chip cookies, totally figured out, this was the year to try a new gingerbread recipe. I first tried it at my parent’s farm, and then perfected it at home. I had to play around with it! I wanted only about half the sugar I usually use, and double the ginger. I love the feel-good ginger. Making cookies from scratch is a rewarding experience – and it’s nice to have my kids around too to taste test and see all the gorgeous ingredients that go in there. Classic Gingerbread Cookies:

Servings: 2-3 dozen cookies, depending on cookie cutter size
Prep: 30 minutes | Chill Time: 2 hours | Cook Time: 8 minutes | Total Time: 2 hours and 38 minutes

What You Need:

Cookie Ingredients:
⅔ cup shortening
1 tsp. Ground cloves
1 tsp. Cinnamon
½ cup sugar
1 tsp. Baking powder
½ cup molasses
1 egg
2 ¾ flour
1 tsp. Baking soda
1 tsp. Ground ginger
½ tsp. nutmeg

Frosting Ingredients:
3 cups powdered sugar, plus extra for dusting.
4 Tbsp whole milk
2 Tbsp corn syrup
1 tsp vanilla

What You Do:

Directions for Cupcakes:

1 – Preheat oven to 350 degrees F.

2 – Combine flour, baking soda, baking powder, cloves, nutmeg, ginger, and cinnamon in a small mixing bowl and whisk until well combined. Set aside.

3 – Add shortening, sugar, and molasses to the bowl of an electric mixer and mix until creamy.

4 – Add egg to the mixing bowl and beat until well combined and smooth.

5 – Add dry ingredients, and mix well until a soft dough is formed.

6 – Form the dough into a ball, wrap it with plastic wrap, and refrigerate for at least 2 hours or overnight.

7 – Remove the dough from the refrigerator and divide in half. Roll half of the dough out on a floured surface until it’s 1⁄4 inch thick. Cut out with gingerbread man cookie cutters and place, evenly spaced, on a cookie sheet.

8 – Bake for 7-8 minutes or until lightly browned on the bottom.

9 – Place on a wire cooling rack and cool completely.

Directions for Frosting:

1 – Add powdered sugar, corn syrup, milk and vanilla to a large mixing bowl and beat until smooth and creamy.

2 – Add frosting to a piping bag fitted with desired decorating tip and pipe faces, buttons and outlines on gingerbread cookies.

3 – As an alternative decorating option, lightly dust the cookies with extra powdered sugar.

4 – Let frosting harden before stacking.
