I think it’s the marshmallows, right? They definitely help with credibility. And those cute little faces! You almost want to rescue the poor snowman, or at least not eat it. That won’t be an option, though, because these are delicious! Chocolate cupcakes! Royal Icing! All of the wonders and none of the fondant! We don’t love fondant. We use it, but we love marshmallows more. Or at least my kids do. I like them if they’re on top of a cupcake or in hot cocoa. Funny story, here. A marshmallow fell out of the bag and onto the pantry floor, and someone (a kid) left the door open. Toddling Rider found it and was walking around saying, “mmm.. yum.. mmmm..” and we didn’t know why and then we saw that he was slowly mouthing a marshmallow. Not a great one-year-old choice, but hey, he’ll never forget the 20 seconds he got before we caught him.
Christmas Melted Snowman Cupcakes:
What You Need:
For the Cupcakes:
¾ cup all-purpose flour
2/3 cup cocoa powder
1 tsp baking powder
2 large eggs, (at room temperature)
1 cup granulated sugar
1/3 cup vegetable oil
½ cup milk
Pinch of salt
2 tsp vanilla extract
1 package marshmallows
For the Royal Icing:
1 egg white
3 Tbsp lemon juice
1 + 1/3 cup (175 g) powdered sugar
Serving: 8 Cupcakes
Prep time: 20 minutes
Cooking time: 20 minutes
Total time: 40 minutes
What You Do:
For the Cupcakes:
1 – Pre-heat the oven to 180 C / 350 F
2 – Then, in a bowl, whisk the eggs, sugar, and vanilla extract
3 – When the mixture become fluffy, add the milk and oil and continue to whisk
4 – In another bowl sift the dry ingredients, (flour, cocoa powder, baking powder, and salt)
5 – Put them into the mixture and mix them until they are combined well
6 – And then prepare cupcake liners in the baking tray
7 – Pour the batter and bake for 18 minutes or until the toothpick comes clean
8 – For the royal icing, mix the egg whites and powdered sugar first
9 – Then add the lemon juice for your desired consistency (It shouldn’t be too thick)
10 – Take out the cupcakes from the oven and rest for 10 minutes to cool down
11 – After they’re cooled down, put the royal icing on top of each cupcake and decorate with marshmallows
12 – You can put some food coloring on the royal icing for the bottoms, faces, and the hands of the snowman
13 – Draw faces and hands on snowman with colored royal icing
