Well, I suppose not, but you can absolutely make this casserole year-round, although there’s something about having it for Christmas morning. You can prep it the night before, calling it officially, “Christmas Overnight Breakfast Casserole”, and there’s nothing like digging into those cheesy, bacon, potato-filled, vegetable-laden bites of a warm casserole. Would you eat it before opening presents? After? At my parent’s farm, ever since the six grandkids came along, it takes us so long to open presents – because we do it one by one – that we’ve started having to take a much-needed brunch break in between.

And the kids allow that! The adults do too! I’m not a patient person, and call me crazy, but it’s all about my parent’s breakfast casserole! They prep it the night before and then just pop it in the oven when brunch time is near. There’s hot carafes of coffee, my dad’s oven-cooked bacon, Orange Julius to drink, and a giant box of doughnuts that my brother always brings. And if he didn’t? I think Des the Doughnut King would be quite upset. There’s always sausage and fruit as well.

My eye is always on the prize, though. The casserole.

My recipe is actually not my parent’s casserole. Theirs includes cream cheese, I believe, and I generally don’t cook or bake with cream cheese ever. Long story there, but I love it at the farm. My recipe is all of my favorite foods – eggs, bacon, cheddar cheese, broccoli, and HASH BROWNS. This is a yes for me. I like to have small meals spread over a whole day, but Christmas is another story! After our brunch, we tend to graze on Christmas stocking candy, and then have a dinner of flank steak, homemade french fries, and salad. There are a lot of us too, with all sorts of dietary interests and restrictions.

Now, let’s talk about the food!! It’s amazing how it turns out so well, and it’s easy!

You can wait for it to cool a bit, but then slice it up and dig in! We serve it with fresh raspberries and Orange Julius or juice. I love to use festive plates and napkins, and even festive pot holders and dish towels.

It’s Christmas Breakfast Casserole Time!


  • 1/2 pound of bacon, cut in half
  • 1/2 bell pepper - any color - chopped
  • 1/2 cup mushrooms, sliced (optional)
  • 1 cup broccoli, chopped
  • 2 tsp salt
  • 1 tsp pepper
  • 8 eggs
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 2 cups frozen hash browns (mine were slightly thawed)


  1. Heat the oven to 350
  2. Grease a 9x13 or 8x8 baking dish or pan
  3. Cook the bacon on medium heat until crisp
  4. Set aside
  5. Cook the vegetables in the bacon pan drippings
  6. Saute for about four minutes
  7. Add salt and pepper
  8. In a large bowl, beat the eggs and whisk in the milk
  9. Add more salt and pepper
  10. Stir in cheese, frozen hash browns, bacon, and cooked vegetables
  11. Pour the mixture into baking dish
  12. Add more bacon, hash browns, and cheese on top
  13. Bake for 40-45 minutes until eggs are cooked through and cheese is bubbling


The casserole can be prepared and kept in the refrigerator overnight before baking.

And there you have it! Whether you prepare it and bake it at the same time, or leave the “batter” in the fridge overnight to bake on Christmas morning, there’s a lot of flavor and favorite foods within this one wonderful breakfast casserole.

  1. I love a nice casserole or quiche as we used to call it. But it doesn’t matter what you call it, it’s the taste and that is yum!! Also baking something in the oven while having guests is great, because you can entertain while the dish is cooking – win, win, right?

    1. You know, I totally should have specified that – I’m sorry. It’s just so subjective. In our house, it comfortably feeds about 10-12 but everyone gets a decent-sized square, but not everyone gets seconds. If I make it for just my family of four, it then lasts a few days.
