When I was a kid, we didn’t have mashed potatoes on Thanksgiving or Christmas (or Hanukkah, for that matter). We had our own amazing traditions, but I’d always see mashed potatoes on the dinner table in movies and TV shows and I knew that when I was an adult, I would have them for the cold weather holidays, and also any other time I felt like it! Although with one caveat that Hanukkah is all about potato latkes and we’re not trying to change that, ya hear! And you will definitely make your holiday feast dazzle with these creamy, cheesy, smoky mashed potatoes. I mean, they are a work of art. My stomach is growling just looking at these buttery potato photos and remembering how they tasted! Like a dream. A creamy, cheesy, smoky dream. So, enjoy!
If someone asks me my most favorite food, I have to separate it into categories. There is way too much good in this world to have to narrow it down to one. Favorite fruit? Apples. Ok, and strawberries, and raspberries but only when fresh-picked from the bush. Favorite vegetable? Broccoli. And sometimes broccoli with carrots. And excellently made salad. Favorite dessert? Easy. Ice cream. Ok, and cookies, but only specific ice cream and specific cookies. Favorite side dish? Mashed potatoes. And maybe, just maybe, my favorite food of them all! If I had to choose.
Cheesy Mashed Potatoes with Gouda:
What You Need:
3 to 4 pounds russet potatoes, peeled and cubed
½ cup (1 stick) butter, sliced
¾ cup heavy cream
8 ounces smoked gouda cheese, shredded
What You Do:
1 – Place potatoes into a stock pot and cover with water. Add salt if desired.
2 – Bring to a boil over medium-high heat and cook for 15 to 20 minutes or until tender. Drain well.
3 – Return the potatoes to the pot and add the remaining ingredients. Beat or mash until creamy.
