I don’t think I’ve ever had to tell you twice, or three times, how much I love Tai Pei Asian Cuisine.

And I remember the first time I bought it. I was at our local grocery store chatting with a friend in the frozen Asian food section of the freezer aisle and I must have been telling a particularly gripping story (to myself) because I backed up into the freezer case and that’s when I saw it. “I must have that now!” I shouted. By the way, my story was a funny story about Des starting kindergarten, but that’s no longer neither here nor there. I loved these flavors! I wanted to try every entrée.

Think about it. We all have our own brands of “busy.” I don’t think I’m unique in my zany life but we all balance our own schedules uniquely. For me, it’s working at home which is not the same as staying at home, and it makes the endless list of domestic and work tasks seem insurmountable. I juggle two businesses, two kids, two dogs, and even the cat and chickens – although they’re a lot easier in terms of daily routines than the kids and dogs. The doorbell is always ringing. The dishes are always piling up. And I have to do errands too. I’m a juggler! Like her! This isn’t me, but there are similarities for sure.

Slow Cooker Hawaiian BBQ Pulled Chicken Sandwiches

It’s so nice out today, that I simply have to tell you how I like to BBQ – with slow cooker Hawaiian Chicken!

This is one of my favorite recipes of all time, and we all know the ample opportunities to party this time of year. Whether it’s graduation, Mother’s Day, Father’s Day, Memorial Day, Fourth of July, birthday, backyard wedding, National Pet Day (yes, really), National Hawaiian Pulled Chicken Day (I made that one up), or just ’cause it’s so nice out and we want to party, there’s always an occasion for Hawaiian BBQ Pulled Chicken Sandwiches. Crockpot Hawaiian Chicken makes the house smell so amazing! Also I love when people walk into our house and ask, “What’s that smell? It smells absolutely divine.”

It’s Slow Cooker Hawaiian Chicken, of course!

Slow Cooker Hawaiian BBQ Chicken Sandwiches

Ingredients:

3-4 lbs. Chicken Breasts
16 oz. Prepared Coleslaw
1 ½ cups Barbecue Sauce
2 cups Pineapple Juice
1 cup Brown Sugar
1 tsp. Minced Garlic
2 tsp. Salt
1 Tbsp. Worcestershire Sauce
1 Onion sliced
2 Tbsp. flour, optional

BBQ Pulled Chicken

Directions:

1 – Place all the ingredients, except the chicken & onion, in a bowl and mix well

2 – Put the chicken and onion in a crockpot and pour the sauce over it. Cook on high for 4-5 hours

3 – Once chicken is cooked through, remove it and shred it

4 – If you would like to thicken the sauce a little, you can add the flour to the sauce and mix well

5 – Add back in the shredded chicken and let cook for about another hour to let the sauce thicken up

6 – Once it is done, place a heaping spoonful on a bun and top with coleslaw

7 – Enjoy!
