These Valentine Cut Out Cookies are so unique and so delicious, that you simply have to make them for a Valentine's Day party, or as a gift for a loved one!

They are THAT good. I’m probably not eating them right now, though. I’m probably sitting in the sun. Wait, what day is it? It’s Tuesday? I’m probably at those early morning magic hours at Disney World. Yes, we splurged this time. I’m curious as to how many times I’ve been on the Mine Train roller coaster as you’re reading this. Let’s hope for more than once, right? Although Cassidy seems to think we should go 15 times in a row on an empty stomach. I tend to disagree. I think once or twice and then see what else is out there! By now, I may have been up since 5am and I may not have had a good breakfast yet. Perhaps I should bring these cookies to snack on? They’re good for more than just your Valentine. Time for snacking!

Valentine’s Cut Out Cookies:

Prep Time: 20 minutes
Cook Time: 10-12 minutes
Servings: 24 cookies

What You Need:

¾ c. Ground pecans
1 ½ c. Flour
½ tsp Vanilla extract
½ tsp Almond extract
Pinch of salt
½ tsp Cinnamon
½ c. Butter room temperature
1 Egg
½ c. Sugar
Cherry jam
Powdered sugar for garnish
Round cookie cutter
Small letter shaped cookie cutters

What You Do:

1 – First, preheat the oven to 350 degrees

2 – Then, cream together the butter and sugar until smooth

3 – Add in the egg, vanilla extract and almond extract; beat until blended

4 – In a mixing bowl, combine the ground pecans, flour, salt and cinnamon, and stir to combine well

5 – Next, add the dry ingredients into the wet mixture, and beat on high until just combined

6 – Separate the dough into two sections, wrap each in plastic wrap, and place the dough in the freezer for about 30 minutes

7 – Remove one half of the dough from the freezer, and roll it out to about ¼ of an inch thick on a well floured surface

8 – Use a round cookie cutter to cut out individual cookies

Now it gets really fun!

9 – Next, place those cookies on a parchment lined baking sheet, and bake for 10-12 minutes until crisp and golden brown

10 – While that batch of cookies is baking, roll out the other half of the dough, and use a round cookie cutter to cut out individual cookies again

11 – Then this time, use small letter shaped cookie cutters to cut out the shapes of different letters in the center of the round cookies. You can spell out any Valentine’s themed words or phrases that you like

12 – When the first batch of cookies has finished baking, place the cookies with the letter cut outs onto the lined baking sheet, and bake them for 10-12 minutes

13 – Then, cool all of the cookies completely, and then place a thin layer of cherry jam on the solid round cookies

14 – Place a cookie with a letter cut out on top of the jam topped cookie to form one sandwich cookie

15 – Lastly, sprinkle the cookies with a layer of powdered sugar for garnish and serve immediately, or store in an airtight container

Peppermint Snowball Cookies

These Peppermint Snowball Cookies have just the right amount of peppermint for a festive, great taste! It's the ultimate holiday cookie for holiday parties!

Guys, these Peppermint Snowball Cookies are legit.

I always figured that snowball cookies were at least one of the few quintessential Christmas cookies – right up there with gingerbread men and sugar cookies for Santa Claus. I’m not sure they ever really did it for me the way other things do, until I added a peppermint flair to them! It’s the perfect amount of peppermint too – enough to be festive and great-tasting, but it’s not overpowering either. Also, these are super cute and pretty. Add them to any holiday platter or class party spread.

Also, it needs to be said that the Ghirardelli Peppermint Chunks are amazing and the kind of thing you might want to buy tons of bags of – before they disappear after the season. They are THAT good for year-round baking, don’t you think?

Peppermint Snowball Cookies:

What You Need:

2 ¼ Cup All-Purpose Flour
2/3 Cup Powdered Sugar
1 Cup Butter (Softened)
¼ tsp Salt
¼ tsp Peppermint Extract
½ Cup Ghirardelli Peppermint Chunks (roughly chopped)
Red Food Coloring
*1 Cup of additional powdered sugar for coating

What You Do:

1 – Preheat oven to 375 degrees

2 – Then, in a medium size bowl, beat the softened butter and powdered sugar until light and fluffy

3 – Add in the flour, salt, extract, and about 4-5 drops of food coloring, and beat until incorporated

4 – Stir in Ghirardelli Peppermint Chunks

5 – Scoop out about 1 tablespoon of dough and form into a ball

6 – Place on a parchment lined cookie sheet, and repeat until cookie sheet is filled

7 – Place in oven for 6-8 minutes or until the bottoms are lightly golden brown on the bottom

8 – Let cool for 5-10 minutes

9 – Place about a third of the additional powdered sugar on a cookie sheet

10 – Next, Place the cookies on the powdered sugar and sprinkle with the additional powdered sugar

11 – The cookies can be rolled in the powdered sugar as well.

12 – Enjoy right away or store in an air-tight container!
