We got an Instant Pot fairly recently and I love finding all of the ways we can use it. Butter Lemon Chicken is pretty much a perfect meal. It’s easy, home-cooked, and smells so delicious. Plus, it’s good all year round! For now, I am thinking about back to school weeknights, or those hard Sunday night dinners, when you’re all exhausted from a great weekend and also a little sad about going back to school and work. Then, you sit down for a delicious meal like this, and it all feels ok. There’s a chill in the air and a great meal in the Instant Pot. And also, it’s totally good in the summer as well. No matter the season and the reason, this is the meal for you! And for me.
Butter Lemon Chicken:
What You Need:
1 lb chicken breasts
½ tbsp coarse salt
1 tbsp sweet paprika
1 tbsp dried thyme
2 tbsp olive oil
1 stick butter, divided
3 garlic cloves, diced and minced
¾ cup chicken broth
2 lemons, divided
½ cup cooking cream
1 tbsp cornstarch
1 tbsp water
Yields: 2-3 servings
What You Do:
1 – Rub and cover both sides of the chicken breast with salt, paprika and thyme.
2 – Set Instant Pot on the sauté function and add olive oil, 3 tbsp butter and garlic; then allow to heat for about 1 minute.
3 – Add chicken breasts into the Instant Pot and brown both sides of each breast, about 3 minutes on each side.
4 – Then, place chicken breasts on a plate and set aside.
5 – Pour chicken broth and juice of one lemon into the Instant Pot. Scrape any brown bits at the bottom of the inner pot.
6 – Then add chicken back into the pot and cover with the lid.
7 – And then, set on manual pressure high for 8 minutes.
8 – Once the time is up, allow for a 10 minute NPR.
9 – Open the Instant Pot and place the chicken on a plate – set aside.
10 – Set the Instant Pot on the sauté function and add chicken stock, cooking cream, and remaining butter.
11 – In a small bowl, whisk together cornstarch and water; then pour into the Instant Pot.
12 – Whisk until the broth mixture thickens up. Add the chicken back into the Instant Pot and turn off the sauté function.
13 – Serve the chicken with your favorite sides. Garnish with thyme and the slices of one lemon, if desired. Enjoy!
