This is my ultimate. I have long talked to you about my situation with brownies, of which I bought a Chocolate Strawberry Brownie at the Florence Pie Bar this morning. I’m not really a brownie person, unless it has that certain special something going on with it. That could be caramel, and often is. Even though brownies are too chocolately for me (which is apparently a thing), I somehow like them with chocolate chips – which is even more chocolate. I also love brownies with peanut butter, and I sure love brownie fruit pizza. I pretty much like anything that you can serve like cake, even when it’s not cake. That goes for cookie cakes and brownie cakes.

Brownie Fruit Pizza Recipe:

What You Need:

1 (18.3 ounce) package brownie mix with ingredients for making cake-like brownies
Kiwi
1 cup powdered sugar
1 teaspoon vanilla
Strawberries
1 cup milk chocolate chips
1 teaspoon coconut oil or vegetable shortening
Blueberries
1 (8 ounces) cream cheese, room temperature
Any other fruit for decorating, other than kiwi, strawberries, blueberries

This recipe is enough to make TWO 9 inch brownie pizzas.

What You Do:

  • First, preheat oven to 350 degrees

  • Then, prepare brownie mix according to package directions for cake-like brownies.

  • Spritz two 9 inch round cake pans with non-stick cooking spray

  • Then line with parchment paper and spritz again – divide the brownie mix between the two pans

  • Bake the brownies for 15 to 20 minutes or until the middle is set and then remove from oven and allow to cool completely

  • Remove from baking pans before decorating

  • In a medium bowl, beat together the cream cheese, powdered sugar, and vanilla, and mix until smooth

  • Prepare the fruit for decorating the cookie – make sure fruit is washed, dried, and sliced (if needed)

  • Evenly spread cream cheese mixture over the cookie and decorate as desired with fruit

  • Melt milk chocolate chips with coconut oil in the microwave for 30 seconds and then stir well and drizzle over fruit

  • Lastly, refrigerate until ready to serve. Best if served immediately
