Sometimes this time of year, you just need easy and delicious. It’s been a heavy spring – thick with clouds and rain and there was even a little snow! For real! This week, it’s 70 degrees and the air is thick with merriment. Our front door has seemed like a revolving door lately, with repairmen, house guests, delivery men, and with all of us in and out, in and out – off to school and work and play. It’s a time of year for transition, and celebrations. It’s also a time of year for last-minute plans, and last-minute parties, and last-minute house guests. Speaking of which..

You have to serve your house guests Breakfast Nachos for brunch! You simply have to do it!

These yummy Breakfast Nachos use McCain Dip’n wedges from Walmart and are the perfect breakfast recipe for the holiday weekend and beyond #recipe #bacon

The secret ingredient is McCain® Dip’n Wedges from Walmart. They’re super fun! They are made with no artificial colors and flavors and are made with real potatoes. Also, they are perfect for any occasion! This is the simple solution for entertaining, delicious side dishes, party appetizers, and of course – yummy brunch. You can get them at Walmart, as I said, and also look for McCain Craft Beer Batter Fries, Seasoned Curly Fries, Crinkle Cut Fries, Seasoned Waffle Frees, and Mashed Potato Smiles. All can be used for these breakfast nachos, in fact!

Breakfast Nachos with McCain Dip’n Wedges:

What You Need:

1 package of McCain Dip’n Wedges from Walmart
1 pound bacon (or turkey bacon), chopped
4 eggs
1 cup shredded cheese – we used a cheddar and jack blend
1 cup guacamole of choice
Sour cream as a topping
1 cup salsa of choice
Beans, rice, avocado, etc. (optional)

What You Do:

1 – First, make McCain Dip’n Wedges according to package instructions

2 – While they’re baking, cook up your bacon in a frying pan and set aside

3 – Then, fry your eggs in the bacon grease because it saves time and tastes great!

4 – When your potatoes are ready, place them in a baking dish and cover with bacon and cheese (and beans/rice if used)

5 – Then bake them for another 3-4 minutes, or until cheese is melted to your liking

6 – Top with salsa, guacamole, fried (or sunny side up) eggs, sour cream, and avocado

7 – Lastly, serve hot and enjoy!

I’ve been in a work haze lately, and I’m not as focused on family calendar details as always. Also, it’s just that time of year in which we are almost ready to kick off summer, and life is already going a little or a lot out of routine. Three times, in the last week or so, we had unexpected overnight guests. Normally, this would throw me for a loop. We are known for our food here, thanks largely to my husband, and one of the most memorable aspects of a loved one’s visit is the food. What will I always remember now, from this day forward? I will remember to serve my NEW favorite brunch. And it’s also good for weekday and weekend brunches with the family.

Oh, and lunch/dinner! Potato nachos are ALWAYS timely.

A few more Memorial Day weekend brunch tips:

  • If you can, serve homegrown or local fruits and vegetables. I remember impressing out-of-towners with the sweetest, reddest, plumpest, juiciest strawberries they’d ever had. Where did we get them? Grown in our own backyard!

  • Set that summer mood. Candles, music, that tablecloth you got as a wedding present. Comfy seating! Hey, whatever works with what you already have. I also love to set up a buffet style meal, because it sets a mood of casual, close fun.

  • Have certain foods and drinks on hand, and plan for ones that are readily and easily available. Are your in-laws on their way over for a Memorial Day BBQ and you have nothing planned?? Relax! Set up a coffee, tea, and/or hot cocoa bar. Put out some flowers and fruits. If you have to run to Walmart, head straight to the frozen section!
