And that means that it’s Breakfast Casserole time! Isn’t it always? This one has Wright® Brand Bacon Hickory Smoked Bacon and Jimmy Dean® Roll Sausage from Stop & Shop, as well as Jimmy Dean® Fully Cooked Sausage Patties as a side. You can make this casserole year-round, although there’s something about having it for Christmas morning. You can prep it the night before, and there’s nothing like digging into those cheesy, bacon-y, potato-filled, vegetable-laden bites of a warm casserole. Would you eat it before opening presents? After? At my parent’s farm, ever since the NINE grandkids came along, it takes us so long to open presents because we do it one by one, so we’ve started having to take a much-needed brunch break in between.
And the kids allow that! The adults, too! I’m not a patient person and call me crazy, but it’s all about the breakfast casserole! My parents prep it the night before and then just pop it in the oven when brunch time is near. There’s hot carafes of coffee, my dad’s oven-cooked bacon, Orange Julius to drink, and a giant box of doughnuts that my brother always brings. And if he didn’t? I think Des the Doughnut King would be quite upset. There’s sausage and fruit as well.
Breakfast Casserole Skillet For Christmas Morning:
What You Need:
6 slices of Wright® Brand Bacon Hickory Smoked Bacon
1/2 lb Jimmy Dean® Roll Sausage
1/2 cup diced onion
1/2 cup diced green pepper
1/2 cup diced red pepper
1 tablespoon minced garlic
2 cups frozen hash browns (do not thaw)
1/2 cup milk
Jimmy Dean® Fully Cooked Sausage Patties
1 teaspoon salt
1/4 teaspoon pepper
What You Do:
1 – First, heat bacon on a skillet as directed on the package. I like to cut my strips in half so they fit better in my pan.
2 – Drain on paper towels and chop into small pieces to set aside.
3 – Then, drain grease from skillet if using for the remaining ingredients.
4 – Add sausage, onion, green and red pepper, onion, and garlic to the skillet.
5 – Heat over medium heat until sausage is browned. Remove from heat and add hash browns; mix well.
6 – Then, add all but 2 pieces of chopped bacon.
7 – Beat eggs, milk, salt and pepper in a mixing bowl.
8 – Pour into skillet with remaining ingredients, and sprinkle with remaining bacon.
9 – Heat in a 350 degree oven for 28-30 minutes or until center comes out clean when a knife is inserted in it.
10 – Lastly, cut into 8 pieces and serve with Jimmy Dean® Fully Cooked Sausage Patties.
We used an oven-proof skillet, but you can also grease a 9×9 square baking pan for the breakfast casserole. And if you do so, cook for 20 minutes and then check for doneness before proceeding to make sure the center is cooked through.
