I’m feeling pretty proud of myself with these. Everything is so sunlit and syrupy-sweet. Ahh, I just love it, and I think you will too. There are so many wonderful things about these Blueberry Pancakes Mini Bites, and mainly, it’s that they taste good. Also, they serve many, are super versatile for weekday mornings, weekend brunches, sleepovers, and parties, and they freeze well too if you make too many. Although if you’re like us, you won’t have any left over to freeze!

Blueberry Pancakes Mini Bites

Blueberry Pancakes Mini Bites:

What You Need:

3/4 cup flour
2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup milk
1 egg
2 tablespoons butter, melted
1 teaspoon vanilla extract
1/2 cup blueberries

What You Do:

1 – First, preheat oven to 425F.

2 – Then, sift together dry ingredients. (Or just quickly whisk them together in a large bowl for a similar effect.)

3 – In a medium bowl, beat milk, egg, butter, and vanilla until combined.

4 – Make a well in the center of the dry ingredients. Pour wet ingredients into well. (Process shot for this step, as it can sound confusing). Whisk just until combined. A few lumps are okay.

5 – Spray mini muffin tin. Use a small cookie scoop or tablespoons to pour batter into tins.

6 – Lastly, bake for 8-10 minutes, until cooked through. (check at 8!)

Pro Tips: Add whatever toppings you choose into the mix or on top when you serve. Sprinkles for funfetti, chocolate chips, blueberries, strawberries, coconut,… Possibilities are endless. These freeze well! Store in a freezer bag until ready to use. Then pop in the microwave for 30-45 seconds to thaw for breakfast!

For ours, we served them with blueberries instead of containing blueberries, but you have so many options.

It’s really such an easy recipe! We have a few mini muffin pans from mini muffins and mini cupcakes. I didn’t even think to use them for pancakes until I saw a friend use them like this during maple sugaring season several years ago. So I started to think about different ways to customize them. Blueberries, strawberries, rainbow sprinkles, raspberries, chocolate chips, the works! So much more to discover. Right? Right. And now it’s drool-inducing photo time.

  1. Oh, my god, Tamara. You have really outdone yourself with these! They sound soooo delish and I have just pinned this recipe. It is a must to try on a weekend—and they don’t seem too complicated (bonus!).
