It’s the first day of school so let me just tell you one thing: Beach Day White Chocolate Pudding Cups.

It’s about the beach. The Beach. In Des’ first grade classroom – in which his previously scheduled teacher left to take a job closer to home over the summer and her position was filled by OUR NEXT DOOR NEIGHBOR (who is a goddess angel) – they are starting with an ocean unit. On the first day of school, kids brought in anything to do with the ocean or beach. Now I haven’t picked up Des yet from his first day, but I hope the shark tooth we bought in a Provincetown shell shop and then put in a Marvel Avengers baggie for him is a big hit. I really do. The beach itself? A big hit with kids. Resonant and powerful.

That’s why I’m gently nudging you to make these over the long weekend. Summer is forever in our hearts.

Also, as you can see above, they’re totally easy to make and rather delightful. Just imagine your kids’ faces when you serve them this! And if you’re like us, you go to a New England beach in the summer and a Florida beach in the winter.

Beach Day White Chocolate Pudding Cups

What You Need:

Small plastic cups
(2) boxes of white chocolate pudding
Blue food coloring
Vanilla wafers
Teddy Grahams
Swedish Fish
Round peppermints

What You Do:

1 – Start by filling a food processor halfway with vanilla wafers, and grind it up fine – you can also use a ziploc bag and rolling pin

2 – Fill each cup up 1/4 of the way with vanilla wafer crumbs

3 – Prepare pudding according to box instructions

4 – Add about 6 drops of blue food coloring to your prepared pudding and stir well

5 – Fill each cup the remainder of the way with blue pudding

6- Add two Teddy Grahams, one Swedish Fish, and one round peppermint (beach ball) to the top of each pudding cup

7 – Refrigerate until ready

8 – Serve and enjoy!

  1. Yes, totally holding onto summer for as long as we can and also doing the beach in November if that counts with Disney and Florida. So there is that, too here. And hoping your kids had the best first day back now, as well 🙂

    Omg, Tamara, these are adorable. Like I don’t even eat pudding but I would probably make an exception for one of these beach cups ❤️
