We are getting into the rhythm of school at home, and note, this does not mean homeschooling! Both kids’ teachers have sent home work that they update weekly and that takes up a good chunk of time. They also continue to practice their musical instruments because the music school holds video lessons – and we also spend a lot of time outdoors. Since both of my kids take cooking and baking classes at school, I thought it would be fun to make an EASY and fun cake with them. You canNOT imagine how good this cake smells! And that’s because the secret ingredient is Juicy Juice! Thinking about a warm, rising, berry-smelling cake!
Now, the recipe calls for whipped topping and we only had canned whipped cream. It is SO good like this, but can make the cake tip over if you’re not careful. So if you don’t have a spreadable whipped topping from a tub, you can use any kind of whipped or frosted topping as possible, while making sure you have a plan to get the cake to stay standing. For us, that was more of the delicious homemade Juicy Juice sauce in between the two cake layers! YUM.
Baking With Kids: Juicy Juice Tres Juice Cake:

Makes 1 cake – 12 servings
What You Need:
1 box yellow cake mix
1 ½ cup Juicy Juice® 100% juice, berry flavor
½ cup Juicy Juice® 100% juice, cherry flavor
½ cup Juicy Juice® 100% juice, fruit punch flavor
½ cup vegetable oil
2 tablespoon corn starch
4 cups whipped topping
⅔ cup strawberries, large diced
½ cup blueberries
⅔ cup raspberries
¼ cup mint, garnish
What You Do:
1 – First, preheat oven to 350 degrees.
2 – And then combine cake mix, 1 cup of Juicy Juice® 100% Juice, berry flavor, oil and eggs in a bowl.
3 – Make sure to whisk together until smooth and all ingredients are fully incorporated.
4 – Pour batter into two greased 8″ round pans, bake cake in a 350-degree oven for 20-24 minutes, or until you poke it with a cake tester (or toothpick) and it comes out clean.
5 – And then, set aside and cool completely.
6 – Whisk together remaining juices and cornstarch, cook over medium heat in saucepan for 5-7 minutes, or until thickened – and then place in refrigerator to cool.
7 – Mix berries and mint in a bowl.
8 – Spread bottom layer of cake with two cups of whipped topping, then drizzle with half of juice sauce.
9 – Add top layer of cake, spread with additional two cups of whipped topping and drizzle with remaining sauce.
10 – Finish with berry and mint mixture.
