We’re talking food, wine, and good friends – what could be better than that? Lately, I love the pace of our weekends. True, sometimes they’re too fast for my liking with writing events and photo shoots, but there’s alway a time of day in which I do relax. With the craze of back to school and work, we need to take this time to slow down. Cassidy works in the garden sometimes while I edit photos, from morning until night. The kids have play dates or grandparents days or they run around and play/ignore us/help where need be. They most love helping to harvest our garden crops. This year was a good one!
This weekend was no exception. I had a few friends over on Sunday afternoon and a few more on Sunday night and we were proud to be able to serve them celery from our own garden, bacon-wrapped potatoes, and wine. I LOVE sharing small bites and wine. It reminds me of my northern California days, but this season is so gorgeous around here – no matter how transitional – that I don’t even get too homesick for the west coast. It’s nice to be with loved ones and eating food from our own garden! Speaking of which, tiny potatoes, bacon, and a brown sugar glaze. Awesome, right? I’ll show you how HERE:
Bacon Wrapped Potatoes:
Ingredients
- 8 bacon slices, cut in half
- 16 tiny, multi-colored potatoes
- 1/2 cup dark brown sugar, packed
- 3 tablespoons honey
- 1 tablespoon Dijon mustard
- 1 tablespoon pineapple juice
Instructions
- Set oven to 400 degrees
- Wrap each bacon piece around a tiny potato and secure with a toothpick
- You might need to use more than one toothpick to secure it
- Place potatoes in a baking dish and bake for 45 minutes or so
- The bacon should be crisp and the potatoes should be tender when pierced with a knife
- Meanwhile, mix brown sugar, honey, Dijon mustard and pineapple juice in a small bowl and whisk until well blended
- Pour into a small bowl and use as a dipping sauce for the potatoes
- Enjoy!
