Back to School Meals: With Summer Vegetable Tortellini Salad

Do you want to hear something weird? Here in the northeast, we are not even halfway through summer!

In fact, the exact halfway point between the last day of school and the first day of the upcoming school year is this Friday, but who’s counting anyway?? I am! There’s still so much summer to soak up, but it will pass by lightning fast and I don’t want to wake up bewildered and staring at a calendar in disbelief. Preparing for the school year must be done early for me, because I’m someone who tends to get caught up in and overwhelmed by details and emotions if I’m not extra careful.

I’m not exempt from struggling from the work/life balance thing. This is my first summer with more full time work than nearly ever, and this will be my first summer-to-fall transition with full time work as well. There are little tips and tricks we have learned together as a family to suit our busy lifestyles. There are certain domestic and yard duties I simply have to outsource. There are certain work duties I simply have to outsource. Then there are the family priorities that become stronger when life gets busier. For me, that’s having at least one meal or snack a day all together. It can be challenging.

With little time to cook, I depend on quite a few Nestlé products to help supply my family’s needs, and on busy weeknights, these are my particular favorites for one complete meal: STOUFFER’S® Complete Skillets Teriyaki Chicken, BUITONI® Mixed Cheese Tortellini, and BUTTERFINGER® Peanut Butter Cups for a treat to share. Four of them, and four of us!

I’m totally the Balanced Mom, even though I never thought I would be. I seem to thrive off the energy. I think I’m an all or nothing person, and I wanted to go all in. I’ve been improving steadily in the balance department ever since Scarlet started kindergarten and Des started daycare. In the fall, she will enter second grade and he will start preschool. Over the last two years I have found a bit of calmness after being completely overwhelmed and bewildered – more so than ever before – but I’ve also picked up more tasks. I think the balanced parent is often trying and succeeding in finding solutions that work for all.

And what’s more important than eating?

I appreciate quality ingredients and a “dining together” experience, and instead of making too many compromises – I depend on good quality, convenient options to supplement my traditional and homemade options! Nestlé has a variety of amazing products that are the perfect solution for us during the Back to School season. A little of this, a little of that, for balance.

A quick run to Walmart takes me to three sections – first is the Entrées section of the freezers for my STOUFFER’S® Complete Skillets Teriyaki Chicken, or any of the amazing Complete Skillets products. They smell SO good while they are cooking.

Then I go to the deli section for BUITONI® Mixed Cheese Tortellini. BUITONI® Mixed Cheese Tortellini is my spirit animal!

Lastly, it’s checkout time and I find BUTTERFINGER® Peanut Butter Cups right there!

And that is where I turn to for great back to school options that help me balance this busy, wonderful life.

Now, let’s talk about tortellini. It has fueled me for life! Luckily my kids have inherited my love for it. I follow the instructions on the package and cook it all at once – then I put the leftovers in the fridge for lunches, pasta salads, and more.

More like what? More like added to tossed salads, and not just added, but becoming a key ingredient! My favorite salads are the ones that are in season. I love to use the vegetables and fruits you’ll find in mid-to-late summer, like sugar snap peas, cucumbers, carrots, lettuce, peppers, and even raspberries. Think of the produce you’ll find in your own garden, or at local farmstands, CSA’s, farmers markets, or co-ops. I add goodies on top, drizzle on homemade dressing, and it’s my perfect dish.

Summer Vegetable Tortellini Salad

Prep Time: 20 minutes

Cook Time: 10 minutes

Total Time: 30 minutes

Yield: 2-4

Serving Size: 1 large bowl

Summer Vegetable Tortellini Salad

The intention of this recipe is to combine the best vegetables and fruits of the current season with delicious Buitoni Mixed Cheese Tortellini. Kids and adults love it! I find that the raspberries provide a delicious tart and sweet addition to all of the savory tastes.

Ingredients

  • 1 package of BUITONI® Mixed Cheese Tortellini
  • 1 package or head of leaf lettuce
  • Red and green peppers
  • 2-4 hard-boiled eggs
  • 1 pint of raspberries
  • 1 handful of snap peas
  • 1 cucumber
  • Shredded cheese, salt and pepper for garnish
  • Olive oil and vinegar for dressing
  • Dijon mustard (optional)

Instructions

  1. Cook and drain BUITONI® Mixed Cheese Tortellini, as directed.
  2. Mix vegetables in medium bowl.
  3. Top with eggs, tortellini, cheese, seasonings, dressings.
  4. Serve!

  1. I think you know my love of pasta, especially tortellini and now so trying your recipe. Oh and so not wanting to think about summer being half over, but still you are right. Just got my fingers crossed that the second half doesn’t fly by as quickly as the first half did now though.

  3. I’m reading this at 5am and now I’m getting so hungry. I love Nestle. My friend works for Nestle and she brings me lots of Nestle products when we meet but I haven’t seen the peanut butter cups here which I love to try. I’ll remember to ask her.

    • I’m with both of you! I’ve had a lifelong obsession with tortellini. Sometimes I just eat it with sauce or butter, sometimes in salad, and often in soup. YUM.

    • I was inspired by my local deli who makes tortellini pasta salad and the deli counter is next to the salad bar. I was looking at both and decided to combine!

  5. You know, whenever I hear of pasta ‘salad’, I always think of piles of cold pasta mixed with veggies and a sauce. But I love that you actually threw yours on top of lettuce. (Plus, I love pasta so much that this would make me feel like I was actually being healthy about it!)
