
I also have more appreciation for apples in general because we have an orchard near our house that takes it to an art form. I mean, truly next level apple picking. Plus they have Goldrush Apples, which are my favorite apples on earth. And Crimson Crisp apples, which aren’t shabby. That said, I’ve never been into baked or cooked apples ever. Then earlier this week I had an apple cider caramel pastry thing which tasted like heaven. I brought it home and left a fork on the box and my kids tried it too. It was so good, that I knew I had been changed. I had to go baked apples for today’s recipe. After all, holidays are coming! Pumpkin and apple, yum.

Apple Cinnamon Cupcakes:
What You Need:
½ cup granulated sugar
1 stick butter, softened
1 tsp vanilla extract
2 large eggs
1 cup a/p flour
½ tsp nutmeg
Pinch salt
1 tsp cinnamon
½ tsp baking soda
¼ cup sour cream
1 small apple, peeled, cored and cut into small cubes
For the buttercream:
2 sticks butter, softened
4 cups icing sugar
1 tsp ground cinnamon
2-3 tbsp milk
½ tbsp brown sugar
Yields: 12 cupcakes
What You Do:
1 – First, line a muffin tin with paper cupcake liners and then set aside.
2 – Then, preheat oven to 350 degrees F.
3 – In a large bowl, beat together sugar and eggs until creamy.
4 – Add butter into sugar and egg mixture and beat some more. Add vanilla.
5 – In a separate bowl, sift together all-purpose flour, nutmeg, cinnamon, baking soda and salt.
6 – Add dry ingredients into wet ingredients one third at a time. Mix thoroughly.
7 – And then add sour cream and mix.
8 – Add apple cubes and fold into batter.
9 – Scoop about ¼ cup of batter into each muffin section.
10 – Bake for 15-18 minutes. Allow to cool before decorating.
For the buttercream:
11 – In a large bowl, use an electric mixer to beat together all ingredients. Start speed on low and gradually increase to high.
12 – Once all ingredients are smooth and well-combined, the buttercream is ready.
13 – Scoop buttercream into a piping bag with Wilton tip #12 attached.
14 – And then frost each cupcake generously and sprinkle with brown sugar.
15 – Lastly, serve and enjoy!
And then you enjoy the delicious apple cinnamon baked goodness because these are incredible. I can almost taste them just by writing about them and looking at photos. And your house will get an incredibly cinnamon-y smell. You don’t want to miss that, right? Right.
