And there’s really not much to say other than “YUM.” I LOVE Smithfield®. We buy their ribs, their bacon, their lunch meat, their sausage, and their Marinated Fresh Pork. This is the BEST time of year for it. I think probably all times of year are perfect for Smithfield Marinated Fresh Pork, but there’s something about a delicious and easy meal you can whip up in 30 minutes. My recipe is SO easy to prep and make, and it smells and tastes amazing.
Cassidy was working with a builder on our chicken coop (more like chicken palace) yesterday, and Scarlet had a friend over. It was cool out with a spring breeze that almost felt like autumn, and I knew I had to make something that would perk up the chicken coop builder, and get the attention of three busy kids. The “What’s For Dinner?” question is a big and annoying one in my household, and I’ll do whatever it takes to avoid it. How to avoid it?

First, I go to Walmart. I go there a few times a week anyway, and ours has an exquisite collection of Smithfield Marinated Fresh Pork to inspire my favorite Bacon-Wrapped Pork recipe. For my busy family of four, Smithfield® creates easy weeknight and weekend meals, and delicious lunch leftovers (more on that later). Smithfield Marinated Fresh Pork is so flavorful, and comes in a variety of options. My recipe can be cooked in 30 minutes and it does not require a lot of ingredients! First, I go into the pork section of the deli to find Smithfield Roasted Garlic and Cracked Black Pepper Tenderloin. You can use any other flavor – I happen to love this one.
As I have mentioned, Smithfield® offers a variety of marinated fresh pork options to create easy weeknight and weekend meals. And wait until you see my leftover lunch “recipe” too. It’s REALLY good! These “Real Flavor, Real Fast” options are beneficial to my family. When I saw we’re busy, we are BUSY. Cassidy and I both work around the clock, and we also are currently building a strawberry garden, a chicken flock, and a chicken coop! Add the dog, the cat, and household errands, and dinner should be easy. Whether you like Tenderloins, Loin Filets, or Roasts, and whether you like them grilled, roasted, sautéed, and more – there’s an option. Here’s one of mine:
Ingredients
- 1 lb Smithfield Roasted Garlic & Cracked Peppercorn Tenderloin
- 5 bacon slices
Instructions
- Preheat oven to 425°
- Remove Smithfield Marinated Fresh Pork from wrapper
- Wrap pork loin with bacon slices, and secure with wooden picks
- Place loin in a foil-wrapped roasting pan or dish
- Bake for 25 minutes or until a meat thermometer inserted into thickest portion registers 155°
- Set oven to broil
- Broil 5 inches from heat for 3-5 minutes or until bacon is crisp
- Remove from oven and cover with foil
- Let stand for 10 minutes until thermometer says 160°
- Enjoy!

Speaking of which, wait until you try the leftovers the next day! Here’s my tip. Also, buy soft sandwich rolls. Then use a slice of bacon-wrapped pork loin as the meat of your sandwich. They cut into perfect tender circles. See?

OK, I will let you in on a little secret, I don’t really care for pork. Don’t get me wrong, I like ham or bacon. But regular pork not so much. Yet, wrapping it in bacon is ingenious and might give me the incentive to like it! 🙂
I don’t think I’ve ever heard of Smithfield before, but it looks like I’ve been missing out. Ohhhhh I can’t wait to see the new chicken palace. I hate when people ask me what’s for dinner, I never answer, I always say its a surprise. This bacon wrapped pork looks delicious, I can’t believe it only takes 30 minutes to prepare.

Bacon wrapped anything is excellent! I have bacon wrapped asparagus and hot dogs, but never a pork loin before. This looks like a good dinner recipe that I should make soon.
