Guys, when in doubt make cupcakes. Specifically today it’s Autumn Vanilla Cupcakes.

It’s safe to say that the foliage is going OFF around here. We were in DC for the weekend for a whirlwind trip and I didn’t see even a hint of it down there. That’s all good, though, because it means they have much to look forward to still seeing.

And you know what? So do we.

So much to say about the weekend and how fun it is to travel with my family of four and see long lost family, but I’ll get to that in time. For one cool thing, we had a family photo done by a professional photographer! It was sort of accidental since we just wanted her to take a phone photo that I could send to my parents. We flagged her down and she was wearing her real camera around her neck, and the rest was history. I don’t know HOW on earth my kids posed this perfectly so quickly?

Gorgeous Autumn Vanilla Cupcakes:

What You Need:

One dozen vanilla cupcakes
3 oz. yellow fondant
3 oz. red fondant
Cornstarch for rolling
Maple-leaf cookie cutter
1 stick unsalted butter, softened
2 cups confectioners’ sugar
3-4 tbsp milk
Yellow gel food coloring

Yields: 12 decorated cupcakes

What You Do:

1 – Ensure that your cupcakes are completely cool before decorating

2 – Line a baking sheet with wax paper and fold both fondant colors with one another, creating a “marbled” look

3 – Lightly dust a clean working surface with cornstarch and roll out your marbled fondant, until it is about ¼ of an inch thick

4 – Using your cookie cutter, cut out 12 maple leaf shapes and place each shape on your lined baking sheet

5 – Using a paring knife, score lines on random areas of each leaf, to give them some texture – fold each leaf slightly

6 – Using an electric mixture, beat butter, sugar and milk on slow speed

7 – Gradually increase to high and add yellow gel food coloring – the buttercream is ready once the ingredients are smooth and form semi-stiff peaks

8 – Using a piping bag, frost each cupcake and top with a maple leaf fondant piece
