My mind can’t wrap around 9 years yet. I was at the doctor’s office early this morning to get immunization paperwork required for their first day of theater camp today, and there was a newborn baby girl crying in that newborn baby way in the waiting room. I was right back there with that uncertainty and that love. I’m pretty sure I can remember the aches and pains and bewilderment of those first few days. Today Scarlet and Des were talking about a baby sister (there is NOT one on the way) and Scarlet wondered where she’d sleep. Des had it all figured out. “Obviously she’d sleep with Astro in his crate!”
The truth is, they’re what makes me want to go and do it all over again, even though we’ve gotten this far. The prospect of nine neurotic months of nausea and fear are what stop me. Not my kids. I can’t help but want to bring more of that wonder, that humor, and that big LOVE into this world. Ah, if only it were easy. It’s not, though. It’s the hardest and best thing I’ve ever done. When I’m at a party with Scarlet, and she’s over by other kids, I smile when I look at her. She composes herself uniquely. If she weren’t mine, I’d still feel connected to her. I’d maybe wish that she belonged to me, even if she didn’t.
That said, what does a unicorn birthday kid eat for breakfast? Things with sprinkles, obviously. I love this unicorn smoothie bowl because it’s fit for me to eat too! What’s not to love with fruit, yogurt, flavors, and FUN?
Unicorn Smoothie Bowl:
What You Need:
½ cup frozen blueberries
1 ½ cups frozen strawberries
1 cup milk of your choice
2 tbsp honey
1 tsp cinnamon
3 tbsp Greek yogurt
6 tbsp shredded coconut, divided
2 drops blue food coloring
1-2 drops purple food coloring
2 drops green food coloring
What You Do:
1 – Add blueberries, strawberries, milk, honey, and cinnamon to a blender
2 – Blend until smooth and pour into a bowl
3 – Dollop your Greek yogurt into the smoothie and if desired, create a marbled look with a fork or toothpick
4 – Get 3 sandwich bags and fill each one with 2 tbsp of shredded coconut
5 – Add one color of food coloring into each bag and shake until coconut shreds are tinted
6 – Pour over your smoothie bowl and enjoy
7 – Top with fruit, if desired.
