I will amend it to say that the double winter (winter and then spring) makes you appreciate summer and fall more. We’ve been pretty robbed of good early spring for the past few years. 2018 might have been the worst I’ve seen. It makes me dream about summer nearly every day. That’s one thing that never changes. Summer comes without fail, and then we’re ready for it! We’re ready for warm days, cool breezes at night, and mouth-watering food. We’re ready to PARTY. We have three summer birthdays within our immediate family, so that leads to all sorts of good occasions to entertain several times.
My mom and I LOVE to go to Dollar General. You can ask her all about the fun we have there, and how much we buy. Sometimes, you’re looking for a helping hand. That’s my mom. Then sometimes, you’re both looking for a helping hand, so you look no further than Dixie! Even though summer feels forever and a day away, it really is right around the corner. People are setting up yard sales and family barbecues. I’ve seen it! That’s why I love Dixie products. They help and support, so we spend less time at the sink and more time at the table. What do we love Dixie for? Crafts, of course, because you can make a number of adorable summer crafts. My favorite is for recipes, though. With 5 layers and being 50% stronger than the leading store brand, you don’t need to double up on plates. You might, however, want to double up on servings of my Fruit Tart. It’s pretty magical. Dixie has a Soak Proof Shield™ that can handle anything from salad dressing to burger grease. They are also cut-resistant and microwavable. I think we can all agree that reheating leftovers is awesome, and who doesn’t like warmed up pie? It’s a new twist on my fresh fruit tart.
1 sleeve, 9 full size, graham crackers
1/4 cup sugar
1/2 cup, 1 stick butter
1 brick, 8 oz, cream cheese, softened
1/2 cup powdered sugar
1 tablespoon vanilla
Fresh fruit such as sliced strawberries, kiwi and blackberries
Add graham crackers to a food processor and process for 15 seconds. Add sugar and process for another 15 seconds until everything is a fine crumb. Then, add melted butter and process for 20 seconds or until mixed thoroughly. Pour into 9″ tart pan and use a tart shaper or the back of a spoon to press firmly into the pan. Refrigerate while you make the filling. If you don’t have a food processor, you can finely crush the graham crackers by putting them into a resealable gallon size bag and using a rolling pin to crush the crackers. You can then mix the crust by hand.
Place cream cheese, sugar and vanilla into a food processor and process for 20 seconds. Open and scrape down the sides. Process for another 20 seconds or until the mixture is combined well and smooth. You can also use a mixer to mix these ingredients.
Spoon into prepared crust. Refrigerate for 5 minutes.
Remove crust from refrigerator and top with fresh fruit. Cover and refrigerate for 2-4 hours before slicing into pieces and serving.

Just in April, we have Cassidy’s birthday and our 10 year anniversary. In May, we have five birthdays within our family. In June and July, we celebrate three birthdays. Not to mention all of the holidays. It’s nearly July 4th!
