Guys, I have a summer treat for you today.

You all know I love sweet treats because I can’t talk enough about cookies, mini cakes, and ice cream. That said, I also like to make savory recipes too! Yesterday was the hottest day of 2018 here. We all went to see a matinee in the morning and then came back to do light housework, play with the puppy, read, and relax. Around evening time, I whipped up frozen banana and pineapple smoothies (more on those soon) and a wonderful summer pasta salad. The kids are both obsessed with summer snap peas. This is a green vegetable they both eat like candy. And we already have cherry tomatoes growing here.

So I dreamed up the idea for a cold summer pasta salad. What’s the true star of the show? Fresh mozzarella, of course, otherwise known as my favorite cheese. And you’re probably wondering why Stella® Fresh Mozzarella Cheese? Here’s what to do with fresh mozzarella:

Mozzarella and Summer Vegetable Orzo Salad:

What You Need:

1 cup cooked orzo
2-3 tablespoons Extra Virgin Olive Oil
2-3 teaspoons lemon zest
1-2 tablespoons freshly squeezed lemon juice
Salt and Pepper
1/2 pint grape tomatoes
1 cup snap peas – halved either length-wise or width-wise
8 ounces Stella® Fresh Mozzarella – we used organic
1/2 cup chopped fresh basil

What To Do:

1 – Cook orzo according to al dente on package and then drain and cool
2 – In a medium bowl, whisk together olive oil, lemon juice, lemon zest, salt and pepper
3 – Then, add the grape tomatoes, snap peas, mozzarella, basil, and orzo
4 – Toss to combine
5 – Enjoy! Serves 4
