I don’t even know how to tell you just how GOOD these are!

I’m going to need you to try them yourself. In my endless quest for fun after-school snacks and/or desserts, I constantly think about what flavors go well together. I’m really into the cheesecake flavor, but since I’m not a huge cream cheese fan, I try to see what I can do with Farmer’s Cheese or Ricotta. That’s one of the reasons these crescent roll snacks are SO GOOD! Now I have two kids, so of course I buy Welch’s Fruit Rolls. They’re awesome! We get ours at Walmart and Stop & Shop, but you can also get them at a number of locations near you, like Kroger, Publix, Ahold, ShopRite, Albertsons, Safeway, Price Chopper, Delhaize, Foodtown, HyVee, Giant Eagle, Tops, and Stater Bros.

The thing is, we have a BIG vacation week coming up. When I think of spring break, I always smile, because there are such feelings of joy and freedom associated with it. Since we often stay home for spring break, we make a special plan for each day of that week. On one day, we always go to a farm in the Berkshires and have a picnic. We always bake something together. And if we’re lucky, we visit family or maybe see a nice beach. There are always opportunities for adventure, and there are always reasons to buy our go-to snack of choice – Welch’s Fruit Rolls. What can I say? Fruit is the first ingredient!

And you can taste it! Also, it bakes exceptionally well.

Why should you make my Berry and Cream Stuffed Crescent Roll Snacks? They’re so delicious. The cheese is just enough sweet/salty but SUBTLE to make the Welch’s Fruit Rolls taste stand out. Also, the Welch’s Fruit Rolls bake wonderfully. Not only do they get soft and tart, but that softness lasts – even if you leave the snacks out for a bit. We learned that the hard way, but I’m really glad we did. Welch’s Fruit Rolls are our go-to choice for spring break vacation. Not only do they have 100% of the daily value of Vitamin C, they have 25% of the daily value of Vitamins A & E! As I said above, fruit is the first ingredient. It’s a delicious taste the whole family loves, and that heartily includes Cassidy and me. We know what to buy.

What’s really fun is the form! When you unroll the Welch’s Fruit Rolls, you unroll the fun. You can’t not smile when eating food by the roll! They’re bright and colorful, and full of flavor. As a mama of two, I love options that are good for two lunch boxes, two school parties, two after school snacks, and spring break for two! Honestly, I am SO excited for fun in the sun.

Berry and Cream Stuffed Crescent Roll Snacks


  1. 1 can crescent rolls
  2. 4 rolls of Welch’s® Fruit Rolls
  3. 3 oz. Ricotta cheese (or spreadable cheese of choice)
  4. 2/3 cup confectioners sugar
  5. 1/4 tsp vanilla extract
  6. 2 Tbsp milk


  • 1. Preheat oven to 350
  • 2. Spray large baking sheet with spray, and unroll crescents onto sheet
  • 3. Separate them into triangles
  • 4. Spread each triangle with Ricotta cheese until it's coated
  • 5. Cut the Welch’s® Fruit Rolls in half and place one on each triangle
  • 6. Roll them up into the crescent shape
  • 7. Bake for 13 minutes, or until they're golden
  • 8. Mix confectioners sugar, vanilla and milk in a bowl until it achieves glaze consistency
  • 9. Drizzle on top of the snacks
  • 10. Enjoy!

Sweet Potato Pecan Muffins

These Sweet Potato Pecan Muffins are perfect year-round, but are extra special on those days where you need a little comfort. And they're easy to make too! #recipe #muffins

Guys, these are SO good.

You see, my kids think I’m this excellent cook/chef/baker. And that only cracks me up because I have a little trouble believing in myself! The thing is, to them – I make exactly what they want. PB&J in Star Wars shapes. Ravioli and tortellini. I can pour a bowl of Lucky Charms like the best of them. When I’m focused, though? I can make anything! I once had a woman tell me she wanted to marry me after I made a Snickers Pie for my boyfriend at the time. She totally would have fought him for me. This was good pie, after all. With both kids still being sick, I don’t have a lot of time to write today. I am thoughtful about it, though. I’m pretty much a nursemaid and a waitress right now. I’m just glad they’re eating, so I’m making some feel-good recipes this week. These Sweet Potato Pecan Muffins have a lot of YES written all over them, don’t you think?


3 cups of All Purpose Flour
4 teaspoons of Baking Powder
1 1/2 teaspoons of Salt
2 cups of Sugar
1 teaspoon of Ground Cinnamon
4 eggs
1 1/2 cups of Vegetable Oil
1 teaspoon of Vanilla
2 cups of Mashed Sweet Potatoes
1 cup of Chopped Pecans
1 container of Vanilla Icing (optional)


1 – Start by peeling and cleaning about (3) large sweet potatoes

2 – Boil sweet potatoes until soft

3 – Grease a muffin pan with butter

4 – In a large mixing bowl, combine flour, baking powder, salt, sugar and cinnamon

5 – Combine eggs, oil, and vanilla (I used a blender)

6 – Blend on “pulse” setting about 4 times

7 – Mash your cooked sweet potatoes with a fork

8 – Add your sweet potatoes in the blender and “pulse” about 3 more times

9 – Pour mixture into dry ingredients and stir lightly with wooden spoon until all dry ingredients are mixed in

10 – Gently fold pecans in

11 – Fill muffin tins 2/3 of the way full

12 – Bake on 350 degrees for 18 minutes, or until toothpick comes out clean

13 – Let cool

14 – Frost your muffins if you want to frost your muffins. I certainly did! Then, serve and enjoy

Makes 2 dozen muffins.
