As you may know, I took the kids on an awesome getaway vacation to Maine last week.

We had such a blast. It fostered our sense of adventure, while also providing a unique scenario we had never encountered! I have stayed in hotels with Cassidy. I have stayed in hotels with just Scarlet. The four of us have taken trips together, but, I had never been on a solo parent vacation with just the kids. It’s such fun to explore together, and to get to know each other’s unique personalities away from the home. I knew that Des was more set in his ways than Scarlet, but it provided a chance for all three of us to discover what it was like to travel together as an explorative trio. Cassidy, you were missed!

Extended Stay America

We chose an Extended Stay America in Scarborough, Maine. This location is south Portland and I had only been there once during New Year’s Eve well over 10 years ago! I wanted to explore the city and explore the amazing foliage. We were NOT disappointed. It was absolutely gorgeous. We left on a Friday after Scarlet had her track practice. We felt so welcomed there from the start. It was late at night and we were greeted warmly by the front desk. The check-in process was easy.

Cheesy Chicken and Broccoli Noodles With No Yolks

Can we please talk about No Yolks Noodles again? Yes, we can.

In my last post about them, I made my favorite soup! Using No Yolks and rotisserie chicken helped make such an awesome soup. What I love about No Yolks Broad Noodles is that they’re versatile. They’re not just for stroganoff or casseroles, but they have so many uses. You can make Miso Soup or Sriracha Cheesy Noodles. You can pair your noodles with kale and pesto.

Or maybe try some Cheesy Chicken and Broccoli Noodles?

The recipe is so easy. Here’s what you need:

2 Tbsp. olive oil
1 lb chicken breasts (or use already breaded and cooked chicken like I did)
Salt and pepper
2 cloves minced garlic
2 cups chicken broth
3 cups water
1 bag No Yolks Broad Noodles
4 cups broccoli
1 cup milk
2 cups shredded cheddar cheese
1/2 tsp cayenne powder

1 – Heat olive oil on medium and cook chicken breasts on both sides, until browned.
2 – Add garlic, chicken broth, water, and noodles.
3 – Stir the ingredients and bring the pot to a boil, covered. Uncover and stir.
4 – Turn the heat down to low, stir and simmer for 20 minutes.
5 – Uncover and add the broccoli. Stir until it steams and the liquid evaporates.
6 – Add milk and cheddar cheese and stir until the cheese melts into a smooth sauce.
7 – Add salt and pepper and cayenne pepper to taste. Enjoy!

It sounds incredibly silly how much I look forward to cooking this meal, but it’s more than a meal – it’s a necessity. It makes me feel good and it makes me feel better to cope with the bedtime hours. The 3:00 – 6:00pm hours are my least favorite, and especially this time of year with a chill in the air and those painfully early sunsets coming. I hit a rut last year, with Scarlet in second grade and Des in preschool. I needed to do something to make nights easier. So I came up with a series of recipes that everyone would love, and they wouldn’t be hard to make. No Yolks has been a big part of our meal rotation!
