#Summer #recipes are my favorite! This quinoa taco salad makes for a great quick and easy packed lunch or dinner. It's a great party recipe! AD @SuccessRice

I have to tell you – I remember exactly where I was the first time I had quinoa.

Well, maybe I don’t remember EXACTLY where it was, because the name of the park escapes me, but I remember the feeling, the sensation, the intrigue. I was in San Francisco, and I had moved there not long before this summer barbecue. Everyone brought a dish, but I can’t remember what we brought! My friend, Tina, brought a quinoa salad. I remember that she was trying to tell me how to pronounce AND spell it – and then she gave up and told me to eat it. So, of course, I did.

Then, that experience was colored by the fact that our elderly husky, Stormy, was scratched in the eye by another dog. And we then had to leave the potluck summer barbecue to find a weekend-hours vet, but the point is, I remember the quinoa! And while I may have been intimidated then, by what it was and how to best prepare it, I’m so glad I know now that it’s easy to get great results! For a recent summer weekend barbecue, I wanted to emulate that first time I had quinoa.

I had to put my own twist on the quinoa salad theme, though. I talk about tacos and Mexican food here quite a bit, in case you haven’t noticed. I thought about how delicious it would be to make a quinoa taco salad. Intriguing, no?

Freshly cooked Success® Tri-Color 100% Quinoa, crisp produce, Mexican seasonings. Yes!

Aside from my friend, Tina, and her quinoa salad in San Francisco, I need to tell you a quick taco salad story! Our school cafeteria served taco salad. I can’t remember if it was once a month, twice a month, or once a week, but people would get obsessed with it. In my shared homeroom classroom sophomore year, a student would write a little countdown on the side chalkboard: “10 days to HTSD (Hot Taco Salad Day)”, etc. Then he or she would cross out the 10, and switch it to 9, and so on. The best part was that ON HTSD, they’d write, “Happy Hot Taco Salad Day!” I so applaud that festive foodie spirit.

And that’s why I’m bringing you this recipe today – inspired by many walks of life – but ultimately all mine.

And now, we discuss the most important ingredient – Success® Tri-Color 100% Quinoa. It’s so easy to make and versatile in all types of recipes, all year round. I love the ease of the boil-in-bag cooking process, because I can make a quality recipe quickly and easily! Tada! And I love taking a recipe I already love (taco salad type foods) and giving them the much needed protein punch of quinoa. Why? It’s because Success is in the bag.®

I love that Success now offers a 100% Tri Color Quinoa. It’s a blend of White, Red and Black Quinoa and it’s packaged in a convenient boil in bag – similar to other rice products made by Success. I also love that this wholesome product is gluten free, 100% whole grain, a good source of fiber, and a complete protein. And hello! It contains all NINE essential amino acids. Success! It doesn’t hurt that it’s light and fluffy with a nutty flavor. Oh, and did I mention that it cooks in only 10 minutes, and is packaged in pre-portioned, BPA free boil-in-bags? No measuring and no mess! This is my favorite shortcut ever. It’s nutrition packed and cooks perfectly every time.

As you know, I come from a large family, and I married into another large family.

We are freshly back from our annual Cape Cod trip, and I admit I miss it quite a bit. The cool breeze, warm sands, and rhythm waves from the ocean lulled me into some great hammock sleeps. With a book! You can’t get better than that. I also love that time of day, in late afternoon, when everyone is ambling back from the beach at once. We share the three showers as best as we can, and then get started on a feast for many. With a lot of people eating together, you get a lot of tastes.

That’s why I head to Walmart for my favorite “veggie cuisine.” Do NOT miss this awesome Ibotta offer:

MorningStar Farms® Veggie Pulled Pork is NEW and delicious, and perfect for our summer grilling occasions. I also love MorningStar Farms® Buffalo Chik Patties®. These items, as part of America’s #1 Veggie Burger Brand, are not only for vegetarians – they’re for everyone! We have a mixed bag in our family, and sometimes I’m a mixed bag myself. I like to eat all kinds of food. I love that they’re an as-is meal solution, and they’re great for busy working people, health-conscious people, vacationing people, and in short – EVERYONE. How do veggie foods fit into my life? Quite easily, in fact..

I have found a perfect veggie summer grilling option and I can’t wait to share my recipe with you. Are you ready to shop for delicious MorningStar Farms® products? Hover over my photo and click through to Walmart.com to purchase them!

Last year, Cassidy discovered an awesome way to make outdoor tacos/tostadas – on the grill! When you think of outdoor entertaining and grilling, and how to prepare your shopping lists, menus, and backyards for a get together or barbecue, what do you think of most? I think of fresh and crisp foods. And I think of tortilla. I think of avocado. And I think of pulled pork.
