Often I formulate a recipe idea, and then have Cassidy help me execute it. It’s sort of how we work best. I dream and visualize. He plans and executes. Sometimes he dreams and visualizes, and I plan and execute. Somehow, it all works out.

Day after day, night after night, we set food on the table. The kids get more adventurous by the day, and sometimes, they backtrack. That’s having kids. Scarlet doesn’t like the skin on apples, but she liked them last week. I’d be upset, but this week she’s eating chicken noodle soup, Italian Wedding soup, and artichokes. Did I mention that one yet? The kids are obsessed with artichokes. Other current favorites are tiny meatballs, carrots, and eating food out of bowls made out of food.

There are so many reasons I also love eating food out of bowls made out of food. (say that three times fast) It’s because it’s pretty magical! And more importantly than that, eating such festive foods reminds me of parties. Parties make me happy.

It reminds me of school dances and weddings. Even better, it reminds me of my brother and sister’s Bar and Bat Mitzvahs. True I had my own two years later, but I was way too revved up to eat or remember the food then. For my siblings, the catering company had an entire table devoted to bite-sized foods. Pizza bagels, pigs in a blanket, mini grilled cheese bites, and pretty much anything you would want to fill your stomach with. Ever since then, I seek out the original ideas when I’m being served snacks and appetizers. At our wedding, we had a Mashtini bar! Mashed potatoes in little martini glasses for all!

Pardon me for the wrong sports references but this recipe is, to put it mildly, a home run. You cannot lose with this! If you’re having a big game party, or going to a big game party, you have to bring these. My friend calls them the perfect snack. My husband calls them dinner. I call them the perfect party recipe. It needs to be mentioned that we essentially created them on a whim in the kitchen after a good friend gave me this perfect idea. I chopped while my husband scooped and sliced. He seasoned and I tasted. I tasted and he seasoned. We perfected the recipe in order to get it right for you.

Spicy Chicken Salad in Avocado Bowls

Yield: 4 Servings

Spicy Chicken Salad in Avocado Bowls

Ingredients

  1. 2-3 avocados
  2. 2 tablespoons TABASCO® Sauce
  3. 1/2 red pepper, chopped
  4. 1.5 pounds boneless, skinless chicken breasts
  5. 1 garlic clove, minced
  6. 1 cup fresh strawberries, chopped
  7. 1/4 cup pecans, chopped
  8. 1/4 teaspoon salt
  9. 1/4 teaspoon freshly ground black pepper
  10. 1/2 teaspoon paprika
  11. 1/2 cup sour cream
  12. 2-3 tablespoons Balsamic
  13. 1/2 cup Parmesan

Instructions

  • 1. Preheat grill or skillet to medium high heat and rub chicken with olive oil and seasonings
  • 2. Grill on each side for 2-4 minutes until chicken is cooked through
  • 3. Chop chicken and set aside
  • 4. Scoop out avocado halves and leave about two inches of flesh inside
  • 5. Slice the avocado you scooped out
  • 6. In a large bowl, mix the chicken, avocado slices, red peppers, strawberries, pecans, salt, pepper, paprika, Balsamic and sour cream
  • 7. Toss well to combine
  • 8. Scoop the mixture onto the avocado halves
  • 9. Top with TABASCO® Sauce and serve
  • 10. Enjoy!

Doesn’t it look delicious? It is! It was so much better than I even imagined, and I imagined it as pretty great. I love that it takes simple ingredients and makes you feel GREAT. You can use mayo in place of sour cream, but I tend to skip mayo if I can. The combination of flavors is out of this world. Question: How do you take a nearly perfect summer classic dish, and make it even better? Answer: HEAT!

When I was a kid, my parents would throw the most epic July 4th parties. Along with the seven of us in total, what seemed like hundreds of loved ones would arrive in twos and fours – armed with coolers, freshly baked pies, and cold summer salads. We had a giant, kidney-shaped pool and people would put out their towels on our lawn. I don’t think you could see even an inch of green lawn – because the entire lawn was covered by colorful towels and happy people. The food was memorable!

After the sun went down, we would light sparklers and small fireworks. We would eat melting ice cream and then spoon up all the rainbow sprinkles that had sunk to the bottom of our “ice cream soup.” My dad would blast 38 Special out of the speakers he kept under our deck, and we’d all be swatting mosquitoes and enjoying shared stories. Sometimes, people would even go night-swimming. It was summer in a nutshell! Those are the memories I strive to make with my family.

My sister loves macaroni salad, but potato salad was always my weakness. I remember the different variations of it over the years. I’d have the classic kind – with potatoes, mayo, and dill – and not much else – but then I remembered even more of the potato salads with a little (or a lot) something extra. I’m talking green crunch, and the potato skins still nearly intact.

Potato salad is a lifelong classic, but I’m all about taking things to the next level, and making a big mess doing so! Colman’s Mustard is no condiment – it’s a next-level-inducing active, HOT participant in your favorite summer dish. Whether you add a pinch to pasta or pizza, or to your potato salad, you are in for a treat. This recipe is your perfect summer party dish:

Spicy Smashed Potato Salad

Yield: 4-6

Spicy Smashed Potato Salad

Ingredients

  1. 2 lbs red potatoes, scrubbed and chopped
  2. 1/2 cup mayonnaise
  3. 1/4 cup sour cream
  4. 1 tsp Colman’s Dry Mustard Powder
  5. 1 tsp Colman's Prepared Mustard
  6. 1/2 cup chopped celery
  7. 1 tsp salt
  8. 1 tsp pepper
  9. Scallions, carrots, peppers, etc. for garnish
  10. Dill for taste

Instructions

  • 1. Bring potatoes to a boil in a pot of salted water and cook until tender and easily pierced with a knife
  • 2. Drain potatoes and return them to pot
  • 3. Add mayo, sour cream, Colman's Dry Mustard Powder, Colman's Prepared Mustard, celery, salt, pepper, and garnishes
  • 4. Smash using a potato masher
  • 5. Put in the fridge until chilled
  • 6. Adjust seasonings before serving
  • 7. Enjoy!

You may need to adjust your seasonings until you get your perfect taste. Start slow with your Colman’s Dry Mustard Powder and then work your way up to more. You won’t be disappointed!
