It took awhile, but there’s finally a chill in the air.

I’m finding myself discovering old/new comforts in the midst of fall. I enjoy the smoky smell to the air – and we’re firing up our own pellet stove, after six months dormant. I’m digging out my flannel shirts and fuzzy sweaters and embracing this new season. We have dates on the calendar for pumpkin patch photo shoots, Thanksgiving weekend fun, and even frosty train rides to meet Santa. This season is ON! It’s also a season of change, and even more so than usual. Now we have school more than a month underway – and we’re almost up to two months! The kids are flourishing in school and we have attended back to school night and Scarlet’s track practices. We’ve gotten our flu shots and we’re about ready to hunker down for the cold.

There are some things that are new every year, and we relish the changes. We find better ways to heat our home. We carve better paths of snow to sled down the driveway. We learn something new every year from our annual winter trip to Florida and make the next year the “best yet.” I guess it keeps getting better! Sometimes we take a new trip or snuggle away for the weekend while the kids are at their grandparents, and often we institute a new dinner theme night. We do soup night, or rainbow salad night. As you probably know, we also enjoy the things that stay the same, year after year. PIZZA NIGHT!

And yet, it’s exciting every time. I first fell in love with Ellio’s Pizza when I used to babysit three kids. I’d make the pizza for them and watch them enjoy it, but rarely got to eat some of my own! I never wanted to feel that way so I asked my mom to buy it. It’s a staple dinner item where I’m from (New Jersey) and I’m happy to see it’s here in Massachusetts too! My kids fell in love with Ellio’s Pizza easily. Des will eat almost anything and he LOVES cold pizza in his lunch. So whenever it’s a weekday after pizza night, I put a wrapped, delicious rectangle of pizza right in his lunch box. Scarlet is pickier with her pizza, like a good daughter of a Jersey girl, but she fell in love with Ellio’s frozen pizza over the summer in one sitting.

With everything changing faster than I’d like, it’s awesome to make one thing stay the same. I have raised my kids with some permanent fixtures in our lives – routines and traditions that feel good and celebrate being together. I love to think about the fact that we’ll be doing this same thing years from now, and they’ll probably do an Ellio’s Pizza Night with their kids one day. Do you have pizza on the brain as much as we do lately?

Maybe it’s something in the air! Maybe it’s the perfect combination of cheese, crust and sauce. Or maybe it’s back to school time and all that accompanies these hectic weeks/months. Meal planning. Quick weeknight dinners. Friday night dinner as the first time all four of us are home for dinner? Yeah, that could be it! I am a Red Baroness! How do I know this? My kids tell me. I tell myself. You can add Parmesan and pepitas, and just all around enjoy all of these amazing flavors together. It was the first salad that Scarlet loved.

Fall Harvest Salad With Spiced Pecans & Maple Cider Vinaigrette

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Yield: 3 servings

Fall Harvest Salad With Spiced Pecans & Maple Cider Vinaigrette

Ingredients

  1. For the Salad:
  2. 1 pound butternut squash, cubed
  3. 1 tablespoon olive oil
  4. 2 cups arugula and mixed greens of choice
  5. 1 medium apple, sliced
  6. 1/2 cup dried cherries or craisins
  7. 1/2 cup toasted pepitas, sunflower seeds or pumpkin seeds
  8. Salt & Pepper
  9. For the Maple Cider Vinaigrette: (whisk together)
  10. 1/3 cup apple cider vinegar
  11. 2 tablespoons maple syrup
  12. 1 tablespoon Dijon mustard
  13. 2/3 cup olive oil
  14. Salt and pepper
  15. For the spiced pecans (recommended to make before)
  16. Salt & Pepper
  17. 1/2 teaspoon cayenne pepper
  18. 1-2 teaspoons cinnamon
  19. 1-2 teaspoons light brown sugar
  20. 6 cups pecans
  21. 4 tablespoons melted butter

Instructions

  • Recommended: make the spiced pecans at a different time
  • Preheat oven to 350°
  • Combine salt, pepper, cayenne, cinnamon and brown sugar in a small bowl
  • Spread pecans on a large rimmed baking sheet and toast for 10 minutes
  • Transfer to a large bowl and toss with melted butter
  • Add spices to coat and return to baking sheet to bake for 3-4 more minutes
  • Cool
  • For the salad dressing, whisk all ingredients together and set aside
  • Preheat oven to 375° and line baking sheet with parchment paper or foil
  • Toss the squash with olive oil, salt and pepper and add to baking sheet
  • Spread into an even layer and cook for 15 minutes or until roasted
  • Cool
  • In a large bowl, combine all of the salad ingredients and toss until mixed
  • Dress and enjoy!
