Ok, I’m going to “attempt” to not write too much.

I know, I know – can I do this? I’m still crawling out of a deep work hole, although the light is brighter up here. Also, our eternal winter seems to have lifted. It was 49 degrees last week! Today is 75 and sunny. In about an hour, we’re meeting Scarlet at the school for our annual school lunch at her lunch table. I legit look at the school lunch menu to plan ahead for what day to go. It helps me relive my youth. Today is popcorn chicken, mashed potatoes, steamed corn, and applesauce, if you’re keeping track of this sort of thing! (like I do) And this year our budding kindergartener will be coming with us too!

Last year we got in trouble for leading the kids in chants. They’re supposed to have ten minutes of “quiet eating.” Oops. And yet, the office and the cafeteria seemed delighted to hear we were coming back when I placed our lunch orders this morning? I can’t wait to go! And I can’t wait to come back here because I have BIG FUN news coming soon to a post near you. It won’t be my next one (although check that one out because it rocks) but it will be my post tomorrow morning.

Cars Krispy Treats


1 pkg. 8 count Rice Krispies Treats
1 pkg. Mini Oreos
Wilton Chocolate Candy Discs, Yellow, Brown and Red
1 pkg. M&M’s
1 pkg. Gum, white small rectangles
2- Airheads Candy, white mystery flavor individual size


  1. Lay 3 whole Rice Krispies Treats on a parchment-lined baking sheet. Cut another one into a half piece treat and two others into third-size treats and lay each on the tray with the whole treats. You now have 3 sets of treats.

  2. In 3 separate bowls, melt each color of chocolate. Heat for 30 seconds at a time, stirring between times, until completely melted.

  3. Dip the first set of treats that has a whole piece and the half piece into the brown chocolate, and completely coat. This set will be Mater. Set the smaller piece on top of the whole piece to resemble a car windshield. Repeat this step with each of the other sets and each color of chocolate. These will be Lightening McQueen and Luigi.

  4. Using the Airheads candy, cut 3 windshields to fit onto the cars. I made mine rectangle with little cut outs at the top to resemble the Cars characters. Press these on each car.

  5. Cut a mouth out of the candy for the red and yellow car. Press this on the bottom piece of the car where the bumper would be.

  6. Pull apart the Oreo cookies, and press 4 on each car. Use green, blue, and brown M&M’s for the eyes. Put a dab of melted chocolate on the backs and press on the windshields.

  7. On the brown truck, put a line of chocolate on the bottom piece and place 2 gum teeth where the bumper would be.

  8. Extra optional step – Pipe a line of chocolate on the yellow car over his mouth to resemble a mustache. Use an edible marker to put black dots on the eyes.

  9. Have fun making Lightning McQueen, Luigi, and Mater!

Well if we’re being honest, I hope the Unicorn trend never ends!

The thing is, I’ve been enmeshed in it since my childhood – when I wrote in my Lisa Frank notebook and watched The Last Unicorn before going to sleep in my rainbow sheets, while surely dreaming about unicorns, rainbow sprinkles and pink icing.

My mom and I have this thing where our senses are super-strong. I guess it’s an all-around sensitivity. We’re extra ticklish, and don’t like extreme temperatures. We can smell things from a mile away, and we have been formally or informally diagnosed as “super-tasters.” I’m sure you can imagine how that is. One pretty cool symptom of it is how much the little things matter. It really does matter what sprinkles you use in a recipe, and what brand of marshmallows too. Color matters, and I swear it tastes better anyway – and you’ll be amazed at how much you can elevate a recipe with one added ingredient.

Summer is all about parties for us. I’m a July baby and my firstborn, Scarlet, is too! Des was actually due in the summer as well, but came a bit early in late spring. We throw a lot of parties this time of year. I think this will be the best year yet, because Cassidy has outdone himself with the chicken coop and the strawberry gardens. We are ready to entertain and put together some amazing recipes. I’m talking Rice Krispies treats filled with Keebler Cookies, and topped with chocolate!

Unicorn Rice Krispies Treats

Unicorn Rice Krispies Treats


  1. 5 cups Kellogg's Original Rice Krispies Cereal
  2. 4 Tbsp butter
  3. 5-10 Keebler Chips Deluxe Rainbow cookies, chopped
  4. 4-5 cups Jet-Puffed miniature marshmallows
  5. Dash of salt
  6. 1/2 cup rainbow sprinkles
  7. 1 tsp vanilla extract
  8. 1 1/2 cups melting chocolate
  9. 1/4 cup condensed milk
  10. Pink gel drops (or color of choice)
  11. Cooking spray


  • Grease an 8x8 inch baking pan and set aside.
  • Chop up Keebler Chips Deluxe Rainbow cookies, and set aside.
  • Melt butter, vanilla extract and salt over low heat in a large saucepan.
  • Add your marshmallows and stir until melted and smooth.
  • Remove from heat.
  • Stir in Rice Krispies Cereal and sprinkles until well coated.
  • Grease a large spatula and use it to press mixture into greased baking pan.
  • Melt chocolate with condensed milk over low heat in a medium saucepan.
  • Add in pink gel drops.
  • Pour entire mixture over Rice Krispies Treats.
  • Let cool and add more sprinkles.
  • Let cool completely before cutting into them.
  • Enjoy!

How much fun are these? You should have seen Scarlet and Des’ eyes light up when I was preparing them!

I had fun with the white chocolate. I tend to use a little more butter in my Rice Krispies Treats, which makes the white chocolate topping seep into the treats as a whole. If you want them as more of a garnish/topping, use less butter.
