How about EASY and DELICIOUS buttery and bacon-topped cornbread and/or Pork Sliders filled to the brim with cranberry sauce/mustard. Party passers are my favorite types of recipes and while both of my recipes would be excellent dishes for it, you can also enjoy them with a sit down dinner.

Hatfield has launched new flavors of dry rub seasoned pork tenderloins and loin filets and they are SO GOOD. For my sliders recipe, I used Cracked Black Pepper, but they will all work well. The thing is, it was time to reimagine our holiday meals. We have our go-to recipes and they’re fun but enough is enough. We go to the same parties every year – we can’t serve the same dishes. That’s boring! It was time for new dishes and new flavors using Hatfield Pork Tenderloin and their Maple Brown Sugar Extra Thick Cut Triple Smoked Bacon. Two exciting new dishes.

When I cook around the holidays, it’s always a mix of friends and family walking in and out. I love that. I love that our house is a place people like to visit – with its ski lodge vibe and the amazing smells of Hatfield products! And I love the simplicity. These are easy, delicious, stress-free, hassle-free, delicious-smelling, make-ahead meals. I’m a big fan of simple meal solutions for the holiday season. And the recipes are kid-friendly and picky-eater approved by both of my kids!

Cornbread With Thick Maple Brown Sugar Extra Thick Cut Triple Smoked Bacon

Ingredients

  1. 1/2 pound Hatfield Maple Brown Sugar Extra Thick Cut Triple Smoked Bacon, diced
  2. 1.5 cups cornmeal
  3. 1.5 cups all-purpose flour
  4. 1 tablespoon sugar
  5. 1 tablespoon baking powder
  6. 1 teaspoon salt
  7. 4 tablespoons butter
  8. 1.75 cups fresh buttermilk
  9. 3 eggs
  10. 4 ounces (1/2 a block) of sharp cheddar, grated

Instructions

  • 1. Preheat the oven to 375
  • 2. Heat your Hatfield Bacon in a skillet over medium until the fat renders and the bacon is crispy
  • 3. Remove it with a slotted spoon (so no grease escapes) and set it aside
  • 4. Meanwhile, mix together the cornmeal, flour, baking powder, sugar, and salt
  • 5. Melt half the butter in the microwave and stir it into the batter
  • 6. Add the buttermilk and eggs
  • 7. Lastly, fold in the crispy bacon and cheddar cheese
  • 8. Keep some bacon for the top - you'll want most in the batter and some on top too
  • 9. Add the rest of the butter to the skillet and melt it into the bacon fat
  • 10. Pour the batter into the skillet and spread it evenly
  • 11. Sprinkle the remaining butter and cheese on top and bake for 30 minutes
  • 12. Let it cool and enjoy!

For my second recipe for Pork Holiday Sliders, it only takes about 35 minutes of cooking time. To serve four, you’ll need a Hatfield Dry Rub Seasoned Pork Tenderloin. (we used Cracked Black Pepper) Preheat your oven to 400 and place tenderloin in a shallow roasting pan. Cover it with foil and bake for 25 minutes. Remove from pan and place on a cutting board to let it rest.

Meanwhile, toast or grill snowflake rolls for the buns. Spread them with cranberry sauce and then top with sliced pork loin. You can add pickled onions as well, or try some with salsa verde. Toasted, yummy, flavorful sliders. So simple and tasty!

Can we say YUM?? Yum. This recipe is SO pleasing to the eyes and to the tastebuds.

I’m not native to New England, but after eight years here in western Massachusetts, I’m starting to forget that I’m not from here. Summer is one of our times to shine here, and since this will go down in history as the shortest summer EVER (thanks a lot, winter snow days), we are trying to make the most of it. This weekend, we’re headed to Cape Cod for a few days in Truro. Next month, we have trips, parties, conventions, road trips, galore! I can barely keep up with it. We’re throwing Scarlet’s birthday party in a couple of weeks, and I’ve been gathering summertime party snack recipes that I’d love to make.

This recipe has two sources of inspiration.

1 – My mother-in-law! We are all cheese lovers in this house and one day she was hungry but in a hurry at our house, and I watched her make a “sandwich” out of cheddar cheese and apples. I thought, “Well, how cool is that? She inspired me!”

2 – Big Y. That’s one of the greatest parts of living where I do – we have access to a wonderful grocery store. I knew that if I was thinking about fruit and cheese party snacks, all I had to do was head to Big Y and instantly get inspired by the vibrant produce selection and the Heluva Good! ® Cheese. Found in the refrigerated block cheese section, I picked up three varieties: Heluva Good! Jalapeño Jack, Heluva Good! Colby Jack, and Heluva Good! Extra Sharp Cheddar Cheese.

Ultimately, I chose Colby Jack for my recipe because Scarlet loves that marbled goodness!

I love making creative and fun recipes, that are also visually appealing. I’m in the “never too much color” camp of recipe creation, and luckily there are so many seasonal and vibrant choices right now. I grew up on rainbow everything, and I love rainbow food. I was happy that Big Y had everything I needed to pull this off. You can read in my special notes in my recipe about different fruits you can choose for this recipe. I also think you could use Heluva Good! Cheese for a rainbow vegetable kabob recipe too! In fact, I’ll be doing that quite soon! The sources of inspiration are numerous, aren’t they?

Rainbow Fruit & Cheese Kabobs with Cinnamon Honey Yogurt Dip

Yield: 20 servings

Serving Size: 1 kabob

Rainbow Fruit & Cheese Kabobs with Cinnamon Honey Yogurt Dip

Ingredients

  1. 20 bamboo or other skewers
  2. 1-2 blocks Heluva Good! Colby Jack 8 oz. cubed
  3. 20 strawberries, hulled
  4. 20 mandarin oranges
  5. 20 pineapple chunks
  6. 20 honeydew melon chunks
  7. 20 blueberries
  8. 20 blackberries
  9. For the dipping sauce:
  10. 2 cups Greek yogurt (I chose vanilla)
  11. 1/4 cup honey
  12. 1/2 tsp cinnamon

Instructions

  • 1. In a medium bowl, stir yogurt, honey and cinnamon. Chill and set aside.
  • 2. Cut the fruit that still needs to be cut.
  • 3. Add a cube of cheese to the skewer.
  • 4. Add the strawberry to the skewer.
  • 5. Then the orange.
  • 6. Then the pineapple.
  • 7. Then another cheese cube.
  • 8. Then add the honeydew.
  • 9. Add the blueberry.
  • 10. Finally, add the blackberry and one more cheese cube.
  • 11. Repeat 20 times!

Notes

I used the amazing produce we had in our fridge. You can absolutely try anything! For "purple", try grapes. For "green", try kiwi. For "red", try raspberries. You get the point!

All Heluva Good! Cheese will fit in for this recipe. You can give it an Extra Sharp Cheddar taste, and use apples instead of strawberries. Maybe you can use Jalapeño Jack to give it a kick! These tasty bites are my favorite recipes for any parties.

Not only do I use them for parties and for snacking, but these tasty bites are awesome for breakfast or lunch as well! My kids will ask for them after every party, because they know I keep any leftovers (rare) in a container in the fridge. You can just pull them out and dip them in a fresh honey cinnamon yogurt dipping sauce. BOOM – instant summer snacking solution.
