If she goes to a birthday party and they run out of cake, or serve it too early or too late, she remembers. She’s shrewd like that. I don’t have cake for you, but I have something I believe is even better – GIRL SCOUT COOKIES – and served in a brand new delicious way, no less! SHOOTERS! So get out your Girl Scout cookies, or order them if there’s still time.


Personally, I’ve been stockpiling Tagalongs, but they’re not part of this recipe.

For the rest of this week, you will be visited by three Christmas St. Patrick’s Day/Beauty and the Beast ghosts. I like to tell people what to look forward to – because I hate surprises – so this is post #1. Tonight, post #2 will be a Beauty and the Beast recipe. Remember my Chip the Teapcup Treats? I’m ready for this week to end. We had a snow day, and then one of those magical mornings in which Des had a one hour delay, Scarlet had a two hour delay, and our town didn’t do a good job at plowing our roads. As usual, I’m overworked, underfed, and excited for my Thursday afternoon with Des. You could make this a virgin drink, and we all know I only drink virgin drinks, but I’ll let you make that call! Celebrations are celebrations, aren’t they? You choose your own adventure.

Thin Mint Shooters

Yield: 6

Thin Mint Shooters

Ingredients

  • 1/4 cup Baileys Irish Cream
  • 1/4 cup Creme de coca
  • 1/4 cup creme de menthe
  • 3/4 cup milk
  • Chocolate frosting
  • 6 Thin Mint cookies
  • Optional - whipped cream

Instructions

  1. Apply a thin layer of chocolate frosting around each rim of your shooter glasses
  2. Pulse the thin mint cookies in a food processor until they are fine crumbs
  3. Pour into a shallow bowl
  4. Dip each shooter rim into the thin mint crumbs, covering the frosting completely
  5. Chill for 10-15 minutes
  6. Place 5 to 6 ice cubes into a cocktail shaker
  7. Add all of the ingredients into the cocktail shaker and shake, shake, shake
  8. Strain and pour into each shooter glass
  9. Serve immediately or add whipped cream and additional cookie crumbs
  10. ENJOY

Can we please talk about bacon for a second?


I know there is a bacon craze, although I believe it’s a timeless one. I know that people will wrap anything up with bacon. I’m guilty of it myself! I wrap asparagus in bacon! And love it. There’s something to be said, though, about wrapping the kinds of food in sweet, smoky bacon – that already seem meant to be paired with bacon. It’s like chocolate and peanut butter. It’s like peanut butter and jelly. When you think of bacon, what do you think about? Personally, I think about breakfast potatoes.

Or lunch potatoes. Dinner potatoes. Snack potatoes. Just potatoes!

So to reiterate, when I think of bacon, I think it goes well with potatoes. When I think about PARTIES, I think they go well with potatoes too. Bacon and potatoes. There are so many Game Days coming up, right? There’s a pretty big one coming up and it’s pretty much what warms my heart during the mid-late winter time in New England. Food, parties, togetherness.

What’s not to like?

It was around Thanksgiving time when my mom and I discovered a little treasure trove for party planning – Dollar General. We had fun looking at foods, drinks, and even plates and napkins. Now that the holiday season is over, I love that there are still reasons to party – we need to get all our game day needs! I think you probably know by now that if you’re planning a party, for any reason, Coca-Cola and Coke Zero are beverages to serve on game day. I get them right at Dollar General.

And now, for the recipe! It’s really easy. We made it last year for a New Year’s Eve party, and they didn’t last long! They’re best served hot. Variations are always welcome. The first time we made them, we cut the bacon in half length-wise and width-wise. This made it so we had more potato, and less bacon. This time, I covered the tots completely with the bacon. And I used cheese chunks last time, broke open the tots, and then put them back together with cheese in them. This time, I sliced the cheese thin to wrap around the tot. Then I wrapped the bacon around the cheese around the potato. Get it?

They get SO sizzly and cheesy.

Bacon-Wrapped Tater Tot Cheese Bombs

Prep Time: 20 minutes

Cook Time: 25 minutes

Total Time: 45 minutes

Yield: 8 servings

Bacon-Wrapped Tater Tot Cheese Bombs

Ingredients

  • 2 cups tater tots - thawed to room temperature
  • 2 ounces cheddar cheese - cut into large and flat slices
  • 4 bacon slices - quartered
  • Seasonings of salt, pepper, or parsley flakes - optional

Instructions

  1. Set oven to 400 F
  2. Line a baking sheet with parchment paper
  3. Half or quarter the bacon slices
  4. Wrap a tater tot with the slice of cheese
  5. Roll the cheese-wrapped tater tot up with bacon
  6. Repeat several times
  7. Place into oven and bake for 25 minutes, stopping to turn the tots over halfway through - with metal tongs or something similar
  8. Serve right away

Notes

I personally would double or triple this recipe if you're expecting a lot of company. They go fast! You can also use toothpicks to hold them together, or to put them on skewers. I can't believe how easy this recipe is, and so delicious!
