One thing I love more than anything is getting together with close friends and family in the winter. We have Game Days – it’s such a New England thing. And that’s why I’m proud to be partnering with Eckrich Deli to create a delicious game day recipe!

When you think of game day, you think of dip, right?

Right. I do, anyway! I think of smoky taste. And cheesy taste. I think of hot dip and homemade chips. The secret to the best pita chips is to make them yourself and serve them still warm! I remember we went to a party in San Francisco and wanted our pita chips to still be warm so we wrapped them in foil for when we got to the party. Then we unveiled our dip and homemade chips and the crowd went wild! For the chips and dip, anyway. I can’t say for sure about the game that night!

I have a fairly deep appreciation for a good college football time. I have certainly been to my fair share of games, because my sister was on the dance team at our college, and there’s nothing like sitting in the stands with hot chocolate and a ton of newfound team spirit. Almost as good? Watching at home with a good spread of appetizers! The thing is, I’m all about creating the perfect game-day dish using my Eckrich Ham Off the Bone Deli Meat that will please any crowd anytime!

The deli counter has an enormous selection of Eckrich Deli Meat. They have ham, bologna, pastrami, beef, and more! My recipe serves about 4-6 people, with leftover ham you can use to make many other tips, or lunchtime sandwiches.

Hot Ham and Cheese Dip with Homemade Rosemary Pita Chips

Ingredients

  1. 3/4 cup Eckrich Ham Off the Bone Deli Meat, diced
  2. 8 oz cream cheese
  3. 3/4 cup sour cream
  4. 1 tsp garlic powder
  5. 1/4 tsp salt
  6. 1/4 tsp pepper
  7. 3/4 cup shredded cheese
  8. 3 pieces of pita bread, cut into eighths
  9. 2 sprigs of rosemary
  10. 1/2 tsp salt
  11. 1/4 tsp pepper
  12. 2 Tbsp olive oil

Instructions

  • 1. For the dip, combine ham, cream cheese, sour cream, garlic powder, salt, and pepper over medium heat
  • 2. Stir in cheese and heat until just gooey
  • 3. For the pita chips, cut 3 pieces of pita bread into eighths
  • 4. Combine bread with salt, pepper and olive oil in a sealed bag or container and shake to combine ingredients and cover pita bread
  • 5. Put pita bread on baking sheet and cook for 8-10 minutes at 425 or until crispy
  • 6. Be careful - they burn quickly
  • 7. Serve together hot and enjoy!

Kale Spiral Ham With Stuffing

Ingredients

  1. 1 Smithfield Spiral Sliced Ham
  2. 1/2 bag kale
  3. Bag of Dried Cranberries - 6 oz
  4. 6.5 oz walnuts
  5. 1 lb Swiss cheese, shredded
  6. 1/2 lb Parmesan cheese, shredded/grated
  7. 6 oz honey
  8. 1/2 bag of glaze (reserve 1/2 to pour on ham while cooking)
  9. 1 tablespoon fresh coarse ground pepper
  10. 1 tablespoon garlic powder

Instructions

  • 1. Preheat oven to 275°F
  • 2. Place unwrapped ham in shallow roasting pan, flat side down
  • 3. Cover ham with foil and bake for approximately 15 minutes per pound
  • 4. Place refrigerated glaze packet under warm water for 1 minute until it's softened
  • 5. Meanwhile, chop kale coarse to medium
  • 6. Chop walnuts medium
  • 7. Grate Swiss cheese and Parmesan, if not already grated
  • 8. Mix all ingredients in a bowl to mix evenly
  • 9. Add honey and 1/2 glaze packet last to bind ingredients
  • 10. Remove ham from oven 10-15 minutes before the end of warming time and carefully use utensils to turn it over
  • 11. Stuff mixture between each ham slice, making sure to push it all the way in
  • 12. Apply the last 1/2 of glaze packet evenly over ham surface and let it sit for 5-10 minutes
  • 13. Bake uncovered for the last 10-15 minutes, until cheese is melted
  • 14. Enjoy!

Is your mouth watering yet? The kale stuffing is the best part. As you can see from the recipe, you make it yourself in a bowl and add the refrigerated glaze packet last. It’s such a delicious stuffing and doesn’t require a lot of heat. I actually remember how it smelled the first time I made it. I took it to a friend’s house and had to smell it for the whole car ride, but I couldn’t eat it yet! Then at my friend’s house, we popped it in the oven for warming and we all loved it.
