I’m from New Jersey, and I miss all the summer concerts and festivals I could see down the shore there, or in and near NYC. Then when I lived in San Francisco, we got such incredible festivals! I worked at a grocery store there – and customers would come in to get their big music festival supplies. I would help them put their orders together, and we would compile the best products for energy, health, hydration, and flavor-on-the-go. I’d always direct them to El Yucateco®. Why? Why, indeed!
I get my El Yucateco® hot sauces at a little market across the bridge from our city. It’s called Ecuador Andino Store. If you’re ever in town, I encourage you to go there! The customer service is fantastic, and they always have exactly what I need for flavorful cooking. I had a lot of trouble deciding which flavors to use over the weekend, so I got three!
So, I need to tell you the grilled cheese story. My husband makes it really well – the kids always beg for more. I wind up eating their scraps and then I say that it’s just as good for adults – but needs something special. Flavor. Cassidy tends to do a lot of traveling for music festivals and concerts. One thing that’s been made famous in the parking lots of music festivals is grilled cheese. People tailgate with portable grills, and make amazing grilled cheese. When I think of fueling for concerts, I think of grilled cheese. When I think of adding flavor, I look no further than El Yucateco®. Grilled cheese. Good sauces. Check.
Now, let’s talk about the sauces. It’s hard to choose just one, but luckily you don’t have to do that! They can easily be thrown in a purse or bag when you’re on-the-go. Then you can flavor your food anytime and anywhere! El Yucateco® is the #1 authentic habanero hot sauce, made from habaneros hand-picked from their own fields. The sauces are handcrafted to have rich flavor and just the right amount of HEAT. For my recipe, I used Red Habanero Hot Sauce. It’s made from red habanero peppers, tomato, and select spices and seasonings. It’s an “all purpose” sauce, but packs a little more kick than the average hot sauce – but with far less vinegar. You get the true flavors of the pepper in the dishes you create.
- 1 Tbsp cooking oil
- 2 cups cooked chicken
- 8 slices sourdough bread
- 4 Tbsp butter
- 8 slices cheese
- 2 Tbsp El Yucateco® Red Habanero Hot Sauce
- 3 ears fresh corn
- 2 Tbsp El Yucateco® Red Habanero Hot Sauce or Black Label Reserve
- 2 cloves garlic, minced
- 1/4 cup butter
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1/2 lime juiced
- Parmesan cheese (optional)
- 1. Mix cooked chicken and sauce in a bowl, and set aside
- 2. Meanwhile, butter one side of all slices of bread - the "outside" of the sandwich
- 3. Place one slice of cheese on top of the unbuttered side of the bread
- 4. Then, add a good helping of the habanero chicken
- 5. Next, add a second slice of cheese on top of the chicken
- 6. Last, top with another buttered slice of bread - buttered side up
- 7. Cook the sandwich, buttered side down in a skillet for about five minutes
- 8. Make sure the cheese is melted, and the bread is golden brown
- 9. Flip the sandwich with a spatula and cook other side
- 10. Repeat for all sandwiches
- 11. Enjoy!
- You can cook your ears of corn fully in their husks, half in their husks, or fully out of their husks
- Preheat your outdoor/portable grill to medium high heat
- Grill your corn until it's hot and lightly charred - for about 7-10 minutes
- Roll the corn with butter, and spread on Habanero Hot Sauce of choice, pepper, and Parmesan cheese
- Squeeze the juice of a lime, and enjoy!
You have the option to spread the butter, sauce, pepper, and lime on the corn before or after grilling. I didn't find a huge difference either way. Both were delicious!
I know that’s a lot of info, but this is an easy way to get a GREAT meal during your summer music adventures and travels. And it’s so easy! It’s such a simple delight to take an old classic recipe and give it more flavor and pizazz.
1 – Prepare, prepare, prepare. Go grocery shopping and buy in bulk! (like with cheese and bread and corn) Stock up on snacks that can withstand the extreme heat. They give you nutrients too. Look for nuts, oats, dried fruit, etc.
2 – Pack. Seal everything airtight so it can last for days! Make sure you brief up on the rules and regulations at your festival grounds or campsite. You may need a doctor’s note if they don’t allow food, and you need certain foods.
3 – Pack a cooler. You’ll need it for drinks, fruit, and grilled cheese supplies!
4 – Eat a big breakfast. You’ll need it! And grilled cheese is a PERFECTLY good breakfast.
5 – Hydrate, hydrate, hydrate. And move, move, move your body. And then you’ll need to hydrate even more!
