Yes, that deserves capital letters. There are SO MANY reasons I love bite-sized foods – especially with foods that aren’t usually bite-sized – like hot dogs, pizza, burgers, and QUESADILLAS. (also worthy of capital letters) I don’t even need to get into all the many reasons – because the important one is that bite-sized foods remind me of PARTIES. Parties give me good feelings.

It reminds me of school dances and weddings. Even better, it reminds me of my brother and sister’s Bar and Bat Mitzvahs. True I had my own two years later, but I was way too revved up to eat or remember the food then. For my siblings, the catering company had an entire table devoted to bite-sized foods. Pizza bagels, pigs in a blanket, mini grilled cheese bites, and pretty much anything you would want to fill your stomach with. Ever since then, I seek out the original ideas when I’m being served snacks and appetizers. At our wedding, we had a Mashtini bar! Mashed potatoes in little martini glasses for all!

There were toppings galore! Are you starving yet?

Good if you are. My recipe doesn’t take that long to make. I was at a wedding last year (because it’s newly 2017 and all) and there were mini quesadillas! This made me so excited! I knew I had to try my own hand at them. I’ve been a LA MORENA® fan since I found their products in a little bodega years ago. Since then, I’m excited that my Walmart carries their products.

I’m a big LA MORENA® fan, and I have been for awhile now. The company has been providing us with the taste of the authentic Mexican home for over 35 years now! They are a leader in peppers, and I’m learning to get my heat on with them.

Quesadillas are a bit funny to make. They are so easy and quick, once you get the rhythm of them. Generally, you don’t want them too thick, so you put the cheese on only one half of them. I tend to use cheese across the board, but then put the other toppings on only one side. Then you have choices galore! You can use ground turkey or deli turkey. You can use any deli meats. You can use flour tortillas or corn tortillas! You can get your spice and heat from various places. One of my secret ingredients is LA MORENA® Chipotle Peppers in Adobo. I’ll write about it in more detail in my recipe, but remember that a little goes a long way – and that you can use the peppers, just the sauce, or both. You’ll know the tastes of your party:

Recipe Time:

Spicy Turkey, Corn & Cheese Quesadilla Sliders

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Spicy Turkey, Corn & Cheese Quesadilla Sliders

Ingredients

  • 2 tsp olive oil
  • 4 Flour or Corn Tortillas (I chose flour)
  • 1 cup cheddar cheese, shredded
  • 4 slices thin turkey breast
  • 8 avocado slices, thin
  • 1/2 cup corn
  • 1/2 cup LA MORENA® Beans
  • 1/3 cup LA MORENA® Sliced Jalapenos
  • LA MORENA® Chipotle Peppers in Adobo - 13 oz can - only a bit packs a punch
  • 4 oz. sour cream (optional)

Instructions

  1. Heat up 1/2 tsp olive oil (or any oil) in skillet on medium heat
  2. Place one flour tortilla at a time in the skillet and sprinkle with cheese
  3. Then add toppings to one half of the tortilla - add turkey, avocado, corn, LA MORENA® Sliced Jalapenos, LA MORENA® Beans, and use one LA MORENA® Chipotle Peppers in Adobo OR
  4. Spoon on just the sauce of the LA MORENA® Chipotle Peppers in Adobo
  5. Add sour cream and guacamole
  6. Once tortilla is warmed through, fold it over to form a half circle quesadilla and toast one side
  7. When the cheese has melted and you can see golden-brown spots on the underside of the tortilla, the quesadilla is ready
  8. Transfer to a cutting board and slice into wedges - "sliders"
  9. Wipe the skillet clean and repeat
  10. Keep going with remaining tortillas and fillings

Notes

Tip: I chose cheddar cheese to make it more kid-friendly, but feel free to use pepper jack for even more heat. An extra dollop of guacamole would be great in place of fresh avocado. LA MORENA® Chipotle Peppers in Adobo - the sauce is tangy and slightly sweet. You can use the peppers for intense and smoky heat, but also have the option to just use the sauce for great flavor. You can do both too!

Decorations – banners, streamers, real or inflatable footballs, balloons
Drinks – sodas, juices, seltzers, water, and coolers, buckets, small tubs, ice
Food – finger foods, chips and dips, wings, and of course – quesadilla sliders
Dining – plates, bowls, cups, cutlery, platters, trays, napkins, serving bowls
Seating – enough seats in front of the TV for everyone, folding chairs, lawn
& camping chairs come in handy too! Put out throw rugs, blankets and pillows

Taco Sliders & Lightened-Up Taco Dip For Game Day

Often I formulate a recipe idea, and then have Cassidy help me execute it. It’s sort of how we work best. I dream and visualize. He plans and executes. Sometimes he dreams and visualizes, and I plan and execute. Somehow, it all works out.

Day after day, night after night, we set food on the table. The kids get more adventurous by the day, and sometimes, they backtrack. That’s having kids. Scarlet doesn’t like the skin on apples, but she liked them last week. I’d be upset, but this week she’s eating chicken noodle soup, Italian Wedding soup, and artichokes. Did I mention that one on the blog yet? The kids are obsessed with artichokes. Other current favorites are tiny meatballs, cooked carrots, and nachos and chips with dip.

If left to his own devices, Cassidy will almost always make tacos and nachos. While I appreciate this quite a bit, I go in and out phases with it. Sometimes it’s too dry for me, if that makes sense. And while I’m not a vegetarian, I am in love with vegetarian Mexican food. Furthermore, I need something else – something almost sour or pickled. Something that makes your lips and the insides of your mouth pucker a bit. Olives. Pickled peppers. Green chiles. Pace® Picante or Pace®Chunky Salsa.

Made with handpicked jalapenos, you can eat these products all day long. Do you like salsa on your egg breakfasts? I do. How about chicken roll ups for lunch? You can even use the products as a salad dressing replacement, which is a big one for me because I’m not big on salad dressing. (I know, right??) Beyond three square meals, Pace® Salsa is awesome for snacks and game day recipes. These Taco Sliders were WAY better than even imagined:

I came up with this idea a few months ago because sometimes tacos are too big, and sometimes nachos are too messy. So then I thought about how much fun bite-sized taco sliders would be. While you can easily use round chips as the taco shell, we went a step ahead and grilled local corn tortillas to be the taco shells. The flavor of the shells, mixed with standard taco toppings, and then topped with Pace® Chunky Salsa Medium makes this a perfect snack, appetizer, party recipe, etc.

Taco Sliders Recipe Time!

Game Day Taco Sliders

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Game Day Taco Sliders

Ingredients

  • 1 package corn tortillas
  • Round cookie cutters
  • Avocado (or olive) oil
  • 1 lb ground beef
  • 1 packet taco seasoning
  • Shredded cheese
  • Avocado
  • Pace® Chunky Salsa (Medium)
  • Shredded romaine lettuce

Instructions

  1. Cook the ground beef or meat of choice until done and put aside
  2. Heat a dash of avocado (or olive) oil in a pan
  3. Use the cookie cutter to cut bite-sized round pieces of corn tortilla
  4. Cook both sides of the tortilla in the oil, for no longer than a few minutes
  5. Prepare desired taco toppings
  6. Assemble your sliders as you would a taco
  7. Top with Pace® Chunky Salsa

Notes

These taco sliders can be made quickly and deliciously. They are bite-sized, fun, and flavorful. The Pace® Chunky Salsa tops them off with tanginess. While you can use bite-sized chips, the homemade hard taco shells put the flavors over the top.

They have a wonderful crunch and tanginess. I think bite-sized tacos are the stuff of party dreams.

Now let’s talk about another dish. My favorite recipe has always been my mom’s famous taco tip. It’s always been a crowd favorite for us, and I made an adaptation for it that is a lighter version. This goes well paired with the Taco Sliders. Along with Pace® Chunky Salsa Medium, I also have a love for Pace® Picante Medium sauce. This sauce is something else! I use it as a layer of my dip, and I also drizzle it on top. I like for every chip to get an olive, and to get a taste of this sauce.

“Light” Taco Dip Recipe Time!

What you need:

6oz plain Greek yogurt
6oz light sour cream
1 tomato, diced
1 avocado, diced
1 can sliced olives
2 Tbsp taco seasoning
1/2 stalk shredded Romaine lettuce
2 cups shredded cheese of choice
1 bag tortilla chips of choice
1 can refried beans
Pace® Picante

What you do:

  1. Get out your serving dish of choice! Foil ones work well, but I like fancy.

  2. Mix the plain Greek yogurt, the light sour cream, and the taco seasoning in a bowl.

  3. Start the layering with refried beans at the bottom of the dish.

  4. Spread out a layer of Pace® Picante. This is a key ingredient for flavor!

  5. Next add the yogurt/sour cream/taco seasoning layer.

  6. Then spread out a thick layer of cheese.

  7. Add tomatoes, avocados, and olives.

  8. Lastly, top with shredded lettuce and Pace® Picante.
